Homemade New Orleans snowballs | Snow cones

Makes 4 snowballs

What you’ll need
1 gallon purified water (Treated through reverse osmosis)
Sugar
Light corn syrup
Four 16 Fl ounce Styrofoam cups
Eight 16fl ounce plastic cups
Snowball syrup, Snow cone flavor concentrate or Kool aid flavor packs (4 different flavors of your choosing)
Sweetened condensed milk (If you are making the cream flavored snowball)
Whole milk (If you are making the cream flavored snowball)
Vanilla extract (If you are making the cream flavored snowball)

Tools you’ll need
Vertical stainless steel Cheese shredder
Mitten glove
Vinyl glove
Funnel (Optional. This can be used to give the snowball its shape)
9 by 13-inch-deep dish foil pan (To store the ice once it’s shaved)
11 by 17-inch baking pan (To transport the cups filled with water to freeze)

Preparation of ingredients
Frozen water blocks
Step 1- Add 13 cups purified water (Treated with reverse osmosis), 1/4 cup light corn syrup and 1/4 cup sugar into a large bowl. Stir all ingredients together. Adding the sugar and water will give the shaved ice a soft texture and the water also freezes faster than if you were just using regular water.


Step 2- Add Eight 16 fl ounce cups onto an 11 by 17-inch baking pan. Pour the prepared water into each individual cup. Place into freezer for 16 to 24 hours.

Snowball syrup
Note– If you are already using the already made snowball syrup, you don’t have to make the syrup. Make sure you have 4 different flavors of snowball syrup.
Step 3- Add 2 cups water and 1 and 3/4 cups sugar into a medium-sized bowl. Stir all ingredients together until the sugar has dissolved into the water.


Flavoring the syrup
Step 4- Add the prepared snowball syrup into 4 separate containers. The amount of the syrup in each container should be 2/3 or 3/4 cup. To flavor the syrup, add 1/4 teaspoon of Kool aid flavoring or snow cone flavoring concentrate of your choosing. If you are using already premade syrup, you don’t have to follow this step. Stir each bowl individually until combined and set aside.


Cream flavored syrup
Step 5- Add 1/3 cup whole milk (Room temp), 2 and 1/2 tablespoons sugar and 1/2 teaspoon vanilla extract into a medium-sized bowl. Stir all ingredients together until the sugar has dissolved into the liquid. Add 1/3 cup sweetened condensed milk. Stir all ingredients together until combined and set aside.


Shaving the ice
Notes- Do not attempt to shave the ice in a hot kitchen. Make sure your kitchen is cool, or room temp. Make sure you wear a mitten and vinyl glove to protect your hands from getting cold or from injury.
Step 6- Add the cheese shredder into an 9 by 13-inch foil pan. Put on a mitten and a viynl glove onto your right hand.


Step 7- Remove the frozen water from 2 cups. Place one directly onto the cheese shredder and move the cup of frozen ice in an up and downward motion moving very fast. If you hand gets tired, you can take a 1-to-2-minute rest before shaving again. Only shave 2 cups of the frozen ice at a time and take a rest afterwards.


Step 8- Once you shave 2 of the cups of frozen ice. Add the shaved ice into a 16 Fl ounce cup. Carefully add the shaved ice past the top of the cup. Form the shaved ice into a volcano-like shape. You can also place a funnel upside down on top of the shaved ice to form a volcano like shape. If you want to do all 4 snowballs at once. Place the cups with the shaved ice in it back onto an 11 by 17- inch baking pan and place into freezer until you’ve shaved all the cups of ice.


Note- The snowball is best served right after you have shaved the ice, added and shaped in on to the Styrofoam cup and the snowball syrup poured directly on top.


Step 9- To decorate the snowball, add each cup individually onto a shallow bowl. Pour the prepared snow cone syrup (2/3 or 3/4 cup) on top of the shaved ice. You can also add different flavors to the snowball by pouring 2 or 3 different flavorings of the snowball syrup on top of the shaved ice.
