Chocolate chip cookie cake

What you’ll need
All-purpose flour

12-inch diameter pizza pan
2 Disposable pipings bags with couplers
Two Wilton # 4B tips

Preparation of ingredients
Dry ingredients

Step 1- Sift 1 and 1/2 cups all-purpose flour, 1/2 teaspoon baking powder, 1/2 teaspoon baking soda, and 1/4 teaspoon salt into a medium-sized bowl. Stir all ingredients together and set aside.


Cake dough
Step 2- Add 1 stick salted or unsalted butter (Room temp), 4 tablespoons butter flavored vegetable shortening (Room temp), 1/2 cup sugar and 2/3 cup brown sugar into stand mixer bowl. Mix on high speed for 4 minutes. Scrape down the side of your bowl.


Step 3- Add 1 large egg (Room temp), 2 teaspoons vanilla extract, 1/4 teaspoon butter extract, 1/8 teaspoon cake batter extract. Mix on a medium speed for 30 seconds to 1 minute or until combined.


Step 4- Add the first half of the dry ingredients and mix on a medium-low speed for 15 to 20 seconds or until combined. Scrape down the sides of your bowl.


Step 5- Add the second half of the dry ingredients and mix on a medium-low speed for 15 to 20 seconds or until combined. Scrape down the sides of your bowl.


Note- You don’t need a mixer for step 6.
Step 6- Add 12 ounces of the semi-sweet chocolate morsels and fold the morsels into the dough using a spatula. Once done form the dough into a ball and place it into the fridge or freezer for 15 minutes.


Spray a 12-inch round pizza pan with the Baker’s joy non-stick baking spray.
Preheat oven to 375 degrees F.
Step 7- Add the dough at the center of the pizza pan. Press the dough down with your hands forming a flat circle. Make sure the dough is 1 or 2 inches from the edge of the pizza pan as the dough will spread during the baking process.


Step 8- Place into a preheated 375-degree oven for 17 to 20 minutes. Once done remove the cookie cake from the oven. Let it cool completely. It can take 1 to 2 hours.


Making the frosting
Step 9- Add 1 and 1/2 sticks unsalted butter (Room temp), and 1 and 3/4 cups confectioners’ sugar, 1 teaspoon vanilla extract, and 1/2 teaspoon butter extract into stand mixer bowl. Mix on high speed for 2 minutes.


Dividing the frostings
Step 10- Divide the frosting into 2 separate bowls. Bowl 1 will be the vanilla frosting and bowl 2 will be the chocolate frosting which you can use your stand mixer to mix the chocolate frosting.


Bowl 2 (Chocolate frosting)
Step 11- Add 2 tablespoons unsweetened cocoa powder, and 1/4 teaspoon dark chocolate extract. Mix on a medium-low speed until combined.


Bowl 1 (Vanilla almond frosting)
Step 12- Add 1/8 teaspoon almond extract into bowl 1. Stir with a spatula until combined.


Assembling the piping bag and decorating tips
Step 13- Add coupler into 2 disposable piping bags. Add the Wilton # 4B tip onto the coupler and screw the decorating tip into place using the coupler nut.


Step 14- Add the piping bags into a large cup. Add the vanilla almond frosting into one piping bag and the chocolate buttercream frosting into the other piping bag.


Step 15- Pipe the vanilla and chocolate buttercream frostings onto the edge of the cake. Pipe the vanilla frosting frist onto the edge. Leave 1 or 2 inches of space inbetween each of the vanilla frosting. Pipe the chocolate buttercream frosting right inbetween the exposed part of the edge of the cookie that doesn’t have the frosting on it.


Step 16- Lightly sprinkle the Betty Crocker festive sprinkles on top of the buttercream frosting. After that the cookie cake is ready to be served.
