Lemon Ooey Gooey cake

What you’ll need
15 oz box Duncan hines lemon cake mix
Powdered sugar
Salt
Two 8 ounce packages cream cheese (Room temp)
Large eggs (Room temp)
Unsalted butter
1 medium-sized lemon
Vanilla extract
Lemon extract
Yellow gel paste or liquid food coloring

Preparation of ingredients
Dough

Step 1- Add one 15 oz box Duncan hines lemon cake mix, 1 stick melted unsalted butter, 1 large egg (Room temp), 1 teaspoon vanilla extract, and 1/2 teaspoon lemon extract into a medium-sized bowl. Stir all ingredients with a sturdy spoon until the mixture starts to come together, form it into a dough with your hands. Knead the dough for 1 minute then set aside.

Step 2- Rinse 1 medium-sized lemon off with cold water. Zest the entire lemon using a citrus zester. Cut the lemon in half with a knife. Juice one half of the lemon using the citrus juicer.


Making the Gooey lemon topping
Step 3- Add two 8 ounce packages cream cheese (Room temp), 4 cups powdered sugar, 6 tablespoons melted unsalted butter, 4 large eggs (Room temp), 1 tablespoon lemon juice, lemon zest, 1 or 2 teaspoons lemon extract, 1 teaspoon vanilla extract, 1/4 teaspoon salt and 1/4 teaspoon yellow gel paste or liquid food coloring into a medium-sized bowl. Stir all ingredients with a wooden spoon for 1 minute. Once done mix with a hand mixer on high speed for 1 to 2 minutes.


Spray the inside of your baking pan with the Baker’s joy non-stick baking spray.
Preheat oven to 325-degrees F.

Assembling and baking the cake
Step 4- Press and stretch the dough down into your baking pan with your hands. The dough should cover the entire bottom of your baking pan. Once done pour the lemon filling on top of the dough. Shake the baking pan slightly to make everything even.


Step 5- Place into a preheated 325-degree oven on the middle rack for 1 hour. Once the baking time has ended, remove the cake from the oven. Let the cake cool completely. This can take up to 2 to 4 hours. For best results, let the cake cool overnight and place into the fridge if needed.


Step 6- Place a sheet of parchment paper on top of the cake. Place flat surface on top and flip the cake upside down onto the flat surface. Carefully remove the baking pan from the bottom of the cake. Place a cake serving dish or pad upside down onto the bottom of the cake and flip the cake back over onto the cake serving dish or pad.


Step 7- Cut the cake into 3 large strips going down the length. From there cut the strips going horizontally. Once done you should have 15 cake squares. After that the cake is ready to be served.
