Apple Cinnamon Crunch Cake

What you’ll need
All purpose flour
Sugar
Brown sugar (Optional)
Salt
Baking powder
Unsalted butter (Room temp)
Large eggs (Room temp)
Apple juice (Room temp)
Whole milk
2 Red Apples or Apple Sauce
Pecan halves
Quaker oats
Vanilla extract
Butter extract
Almond extract
Cinnamon
Nutmeg
All spice
Confectioners sugar

Tools you’ll need
Baker’s joy non-stick baking spray
Fat Daddio tube pan (10 1/2 inch diameter / 16 cup capacity)
Food processor
Air Fryer (Optional / For Apples)
11x 17 inch baking pan
Cooling rack
Cake sifter or mesh strainer

Preparation of ingredients
Apples

Step 1- Rinse 2 Red Apples and add them into an air fryer basket or pan lined with aluminum foil. Air fry on 400 degrees or in an oven on 350 for 30 to 40 minutes or until apples are soft.


Step 2- Remove skin and puree off of apples. Mash the apple puree with a spoon until smooth. You should have 1/2 cup Apple puree when done.


Oatmeal pecan mixture
Step 3- Add 1 1/4 cup pecan halves or chopped pecans into a food processor. Blend for 15 to 30 seconds.


Step 4- Transfer pecan mixture into a medium sized bowl and add 1/2 or 2/3 cup Quaker oats, and 1/2 to 1 teaspoon cinnamon. Stir all ingredients together and set aside.


Dry ingredients / All purpose flour mixture
Step 5- Sift 3 cups All purpose flour, 1 1/2 teaspoons baking powder and 1/4 teaspoon salt into a medium sized bowl. If you want to add spices, add 2 teaspoons cinnamon, 1/4 or 1/2 teaspoon nutmeg and 1/2 teaspoon all spice. Stir all ingredients together and set aside.


Wet ingredients / Apple mixture
Step 6- Add 1/2 cup Apple puree or Apple sauce, 1 cup Apple juice (Room temp), 2 teaspoons vanilla extract, 1 teaspoon butter extract, and 1/4 or 1/2 teaspoon almond extract. Stir all ingredients with the whisk until combined.


Preparation of cake batter
Note-
If you are adding brown sugar, add 1 1/2 cups regular sugar and 1 1/3 cups brown sugar.
Step 7- Add 3 sticks unsalted butter (Softened and at Room temp), and 2 3/4 cups sugar into stand mixer bowl. Mix on high speed for 6 minutes. Scrape down sides of bowl.


Step 8- Add 5 large eggs (Room temp) into the batter one at a time while mixing on a medium speed. Be careful not to over mix the batter during and after the eggs are incorporated into the batter.


Step 9-Add the All purpose flour mixture and the Apple mixture into the batter 3 separate times. Mix on a medium low or low speed each time for 30 seconds or until incorporated.


Step 10- Spread butter around the bottom, middle, and sides of tube pan. Spray Baker’s Joy non stick baking spray into the baking pan.


Step 11- Coat bottom, middle, and sides of tube pan with the Oatmeal pecan mixture.


Baking the Cake
Preheat oven to 325 degrees.

Step 12- Add half of the cake batter into the tube pan. Sprinkle a generous amount of cinnamon and a small amount of the oatmeal pecan mixture on top of the batter. Add the second half of the batter into the tube pan.


Step 13- Insert a spoon into the batter and carefully swirl the cinnamon and oatmeal mixture into the batter. Once done lightly sprinkle cinnamon and the oatmeal pecan mixture on top of the batter. To make the batter even, shake pan slightly and tap on the bottom of the pan with your hands.


Step 14-Place into a preheated 325 degree oven for 1 hour and 10 minutes. Once the cake is done remove it from oven. Tooth pick inserted should come out clean. If the toothpick does not come out clean, place cake back into the oven and let bake for an additional 5 to 10 minutes. Let the cake cool for 4 to 5 hours before removing it from the pan. Once the cake has cooled, flip the cake onto the cooling rack with an 11 by 17 inch baking pan underneath it.


Making the Apple Autumn icing
Step 15- Add 1 1/2 cups confectioners sugar, 4 tablespoons melted unsalted butter, 2 tablespoons warm whole milk, 2 tablespoons warm apple juice, 1 teaspoon vanilla extract, 1/2 teaspoon butter extract, 1/8 teaspoon almond extract, 1/4 or 1/8 teaspoon cinnamon, 1/8 teaspoon Nutmeg, and 1/8 teaspoon All spice. You can add more of the spices if you like. Stir with a whisk until mixture is creamy and smooth. If you want your icing thicker, add less liquid ingredients or let the mixture set for a few minutes and the icing will thicken on it’s own.


Decorating the cake
Step 16- Pour icing on top of cake. Lightly sprinkle the oatmeal pecan mixture and cinnamon on top of the icing. Let everything set for 15 to 30 minutes before serving. Before you add the cinnamon pecan mixture on top of the icing, you can add it into a small baking pan and place it into a preheated 400 degree oven for 2 to 3 minutes to toast the mixture and then let it cool before adding it on top of the cake.
