What you’ll need

Grits

Eggs (Room temp)

24oz’s thick cut bacon

12oz’s Sausage links

All-Purpose Flour

Sugar

Baking powder

Whole milk (Room temp)

Buttermilk (Room temp)

Salted and Unsalted butter

3 Red Potatoes

Orange juice

Syrup

Seasonings

1 Yellow Onion

Garlic

Salt

Black pepper

Tools’s you’ll need

Two 11×17-inch baking pans

Preparation of ingredients

Step 1- Chop 1/2 of the yellow Onion and reserve 2 to 3 cloves of garlic.

Step 2- Chop 3 red potatoes into small bite sized cubes. Transfer chopped potatoes into a medium sized bowl. Add cold water and 1 teaspoon of vinegar. This will prevent potatoes from turning brown.

Baking the Bacon and sausage

***Preheat oven to 350 degrees***

Note– If you want to serve more people add more slices of bacon and sausage links. (Optional)

Step 3-Place 4 strips of bacon and 4 sausage links into your baking pan. Place into preheated 350-degree oven and bake for 25 minutes.

Preparing and baking your potatoes

***Preheat oven to 425 degrees***

Step 4- Add 3 tablespoons melted unsalted butter and 2 to 3 cloves of garlic into a food processor. Puree for 1 minute.

Step 5-Drain potatoes into a strainer. Let sit for 10 minutes.

Step 6- Transfer potatoes into a medium sized bowl. Add Butter/garlic mixture and 1/4 cup of chopped yellow onion. Stir all ingredients together.

Step 7-Add potatoes into baking pan.  Spread out on to pan as evenly as possible.

Step 8- Place in to a preheated 425-degree oven. Bake for 35 minutes.

Step 9- Transfer potatoes into a medium sized bowl. Add 1/8 teaspoon salt and stir.

Quick tip- To brown the potatoes at the top place into the broiler part of your oven for 1 to 2 minutes. Check every few seconds to ensure potatoes don’t burn.

Preparing your pancakes

Step 10- Add 1 Cup All-purpose flour, 1 teaspoon baking powder and 1/4 cup sugar. Stir all ingredients together.

Step 11- In a separate bowl Add 2/3 cup buttermilk (Room temp), 1/3 Cup whole milk (Room temp), and 1 large egg (Room temp). Stir all ingredients together.

Step 12- Add wet ingredients into dry ingredients. Stir all ingredients together until there are no visible lumps.

***Preheat fire to medium high heat***

Step 13- Add 1/3 Cup of pancake batter into pan. Let sear for 2 minutes. Flip pancake over and let sear for 1 minute. Once done transfer pancakes on to serving dish.

Note- To prevent your pancakes from burning turn your fire down to medium low heat.

Preparing your eggs

***Preheat fire to medium high heat***

Step 14- Add 4 large eggs (Room temp), 1/4 teaspoon salt, 1/8 teaspoon black pepper and 2 teaspoons melted salted butter. Stir all ingredients together.

Step 15- Add eggs into pan. Let sit for 20 seconds. Gently fold eggs together using a spatula for 1 minute. After 1 minute turn your fire off. It should take less than 1 minute for eggs to cook all the way through. Pay attention to the eggs and do not overcook them. Transfer eggs on to serving dish.

Preparing your grits

***Preheat fire to medium high heat***

Step 16- Add 1 1/4 cup water and 2 teaspoons salted butter. Let come to a slight simmer.

Step 17- Add 1/4 cup grits and 1/4 teaspoon salt. Stir all ingredients together. Let simmer for 3 minutes.

Quick tip- If your grits start to get thick add water to thin them out! 

Add syrup and butter on to your pancakes. Serve hot with a tall glass of orange juice and enjoy!
