What you’ll need
Cake flour or all-purpose flour
Sugar
Salt
Baking powder
Baking soda
Unsalted butter (Room temp)
Large eggs (Room temp)
Whole milk (Room temp)
Sour cream (Room temp)
Heavy whipped cream (Room temp)
Vanilla extract
Butter extract
Bubblegum extract
Pink gel paste or liquid food coloring
Blue gel paste or liquid food coloring
Confectioners’ sugar

Fat Daddio tube pan (12 or 15 cup capacity)
Baker’s joy non-stick baking spray
Cooling rack
11 by 17-inch baking pan
Preparation of ingredients
Dry ingredients (Cake flour or all-purpose flour mixture)
Step 1- Sift 3 cups cake flour or all-purpose flour, 1/2 teaspoon baking powder, 1/2 teaspoon baking soda, and 1/4 teaspoon salt into a medium-sized bowl. Stir all ingredients together.
Wet ingredients (Bubblegum cream mixture)
Note- Ingredient amounts for the whole milk, heavy cream and sour cream will vary if you are using cake flour or all-purpose flour.
Step 2- If you are using cake flour, add 1/2 cup whole milk (Room temp), 1/2 cup heavy cream (Room temp) and 1/2 cup sour cream (Room temp). If you are using all-purpose flour, add 1/3 cup whole milk (Room temp), 1/3 cup heavy cream (Room temp) and 2/3 cup sour cream (Room temp). Next add 1 tablespoon bubblegum extract, 1 teaspoon vanilla extract, and 1 teaspoon butter extract. Stir all ingredients together with a whisk until combined and set aside.
Cake batter
Step 3- Add 3 sticks unsalted butter (Softened and at room temp), and 3 cups sugar into stand mixer bowl fitted with the paddle attachment. Mix on high speed for 6 minutes. Scrape down sides of your mixing bowl.
Step 4- Add 5 large eggs (Room temp) one at a time while mixing on a medium speed. Scrape down sides of mixing bowl.
Step 5- Add the Dry ingredients (Cake flour or all-purpose flour mixture) and the Wet ingredients (Bubblegum cream mixture) into the batter 3 separate times. Mix on a medium low speed each time for 15 to 20 seconds or until combined. Scrape down sides of mixing bowl each time as well.
Step 6- Divide the cake batter into 2 separate bowls. The weight of the batter in each bowl is 2 pounds and 2.5 ounces in weight. Add 1/2 teaspoon pink gel paste or liquid food coloring into one bowl and add 1/2 teaspoon blue gel paste or liquid food coloring into the second bowl. Stir all ingredients together in each bowl.
Spray your tube pan with the Baker’s joy non-stick baking spray
Preheat oven to 325-degrees F.
Step 7- Add your prepared pink colored cake batter into the tube pan. Spread batter around the tube pan as evenly as possible. To make the batter more even, shake the tube pan slightly.
Step 8- Add prepared blue colored cake batter directly on top of the pink cake batter in the tube pan. Spread the batter around the baking pan as evenly as possible with a spatula. To make the batter more even, shake your baking pan and tap the baking pan at the bottom with your hands.
Step 9- Place into a preheated 325-degree oven, on the middle rack. Bake for 1 hour and 10 minutes. After the baking time as ended, remove the cake from the oven. Toothpick inserted into the cake should come out clean. Let the cake cool for 2 to 3 hours before removing it out of the tube pan.
Step 10- Flip the cake over onto a large serving plate, cake serving pad or cooling rack with an 11 by 17-inch baking pan underneath it.
Making the bubblegum icing
Step 11- Add 1 and 1/2 cups confectioners’ sugar, 3 and 1/2 tablespoons warm whole milk, 3 tablespoons melted unsalted butter, 1/4 teaspoon bubblegum extract, 1/4 teaspoon butter extract and 1/4 teaspoon vanilla extract into a medium-sized bowl. Stir all ingredients with a whisk until combined.
Step 12- Divide the icing into 2 separate bowls. The weight of the icing in each bowl is 5 to 6 ounces. Add 1/8 teaspoon pink gel paste food coloring into one bowl and add 1/8 teaspoon blue gel paste food coloring into the other bowl. Stir all ingredients together.
Step 13- Pour the pink colored icing toward the edge of the pound cake. Careful not to add the icing onto the middle section of the cake.
Step 14- Pour the blue colored icing towards the center of the cake. Careful not to pour the icing onto the pink colored icing. If you are using a cake serving pad, you don’t have to follow this step. Place 2 flat spatulas underneath the cake. Gently lift the cake from the cooling rack and place it onto a cake serving pad or dish.
