What you’ll need
1-pound cooked boneless skinless chicken thighs
Crystal hot sauce
Vinegar
Tomato paste
Chicken stock
Salted butter
Two 8-ounce packages cream cheese (Room temp)
Pepper jack cheese (8 ounces)
Shredded parmesan cheese
Seasonings
Green onion
Garlic
Cayenne pepper
Smoked paprika
Crushed red pepper flakes

9-inch round deep-dish pie pan
Preparation of ingredients
Seasonings
Step 1- Chop 3.5 ounces in weight of green onions, including the scallions (Green onion ends). Press 1 clove of garlic with a garlic press. You can also chop the clove of garlic with a knife until minced.
Cheese
Step 2- Shred 6 ounces in weight of pepper jack cheese using a cheese shredder. Once you’re done shredding the cheese, place it into the fridge.
Chicken thighs
Step 3- Chop 1 pound of cooked boneless skinless chicken thighs with a knife until the chicken is small bite sized pieces.
Making the buffalo sauce
Preheat fire to medium heat.
Step 4- Add 2 tablespoons salted butter, 1/3 cup hot sauce, 2 tablespoons vinegar, 1/2 teaspoon cayenne pepper, 1/2 teaspoon smoked paprika, 1/4 teaspoon red pepper flakes, and 2 teaspoons tomato paste into a large frying pan. Stir all ingredients together. Let simmer for 1 minute. Once done turn your fire off and let the sauce cool for 10 minutes.
Making the dip
Preheat fire to medium heat.
Step 5- Add 1 tablespoon salted butter, 1/4 cup chopped scallions (Green onion ends), 1/8 cup chopped green onions into a large saucepan. Stir all ingredients together. Let sauté for 1 to 2 minutes. Add 1 clove pressed or chopped garlic, 1/4 cup chicken stock and chopped chicken pieces. Stir all ingredients together.
Step 6- Add 12 ounces cream cheese that’s the entire 8-ounce package plus 4 ounces that’s half of the second 8-ounce package (Room temp), 1/3 cup ranch dressing, and 1 tablespoon shredded parmesan cheese. Stir all ingredients together. Let the mixture get hot for 2 minutes.
Turn your fire off
Step 7- Add 1/4 cup shredded pepper jack cheese and the buffalo sauce. Stir all ingredients together.
Assembling your dip
Set your oven broiler to high.
If you are baking your dip preheat your oven to 375-degrees F.
Step 8- Add prepared dip into your baking pan. Spread the dip around the baking pan as evenly as possible. Generously add the hot sauce on top of the dip. Lightly sprinkle shredded parmesan cheese on top, add all of the shredded pepper jack cheese on top of the dip. Once done add a small amount of the chopped green onions on top of the dip.
If you are adding the dip into your oven broiler, proceed to step 9, if you are baking your dip proceed to step 9A.
Step 9 Place into your oven broiler for 2 minutes. Remove from your oven broiler. Let cool for 5 to 10 minutes before serving.
Step 9A- Place into a preheated 375-degree oven, on the middle rack. Bake for 12 to 15 minutes. Once done remove the mixture from the oven. Let cool for 5 to 10 minutes before serving.
