Buttermilk Drop Doughnuts

What you’ll need
All-purpose flour
Baking powder
Sugar
Salt
Cinnamon
Nutmeg
Unsalted butter
1 large egg (Room temp)
Buttermilk (Room temp)
Whole milk (Room temp)
Vanilla extract
Butter extract
Almond extract
Confectioners’ sugar
Canola oil or Vegetable oil

Preheat fire to medium high heat
Step 1- Add 48 ounces canola oil into a medium sized pot. Let oil get hot for 15 minutes.

Preparation of wet and dry ingredients.
Step 2- Add 1 1/2 cups All-purpose flour, 1/2 cup sugar, 1 teaspoon baking powder, 1 teaspoon cinnamon, 1/4 teaspoon nutmeg and 1/8 teaspoon salt into a medium sized bowl. Stir until combined. Set aside.

Step 3- In a separate medium sized bowl, add 1/3 cup buttermilk (Room temp), 1/4 cup whole milk (Room temp), 1 large egg (Room temp), 3 tablespoons melted unsalted butter, 2 teaspoons vanilla extract, 1 teaspoon butter extract and 1/2 teaspoon almond extract. Mix with a whisk until combined. Pour wet ingredients into dry ingredients. Stir with a sturdy spoon until combined.

Making the icing
Step 4- Add 1 1/2 cups confectioners’ sugar, 3 tablespoons melted unsalted butter, 4 tablespoons warm whole milk, 1 teaspoon vanilla extract, 1/2 teaspoon butter extract and 1/4 teaspoon almond extract. Stir until icing is creamy and smooth.

Frying your buttermilk drops
Note- Make sure you have your cooling rack inside another baking pan and if you don’t have a cooling rack then lined a serving dish with napkins.

Step 5- Scoop up a medium sized amount of batter (2 1/2 tablespoons) using an ice cream scoop lightly coated with oil. Drop the batter into the hot oil. You can use the back of a spoon to help remove the batter off of the ice cream scoop. Let fry to 3 to 6 minutes on each side. Fry 4 buttermilk drops at a time. For the medium sized ones I made in the video, 3 minutes on each side.

Step 6- Remove the buttermilk drops out of the hot oil. Place on to cooling rack or serving dish lined with napkins. Let cool completely so the flavors can settle and increase.

Step 7- Place icing into microwave on high for 15 seconds. Add each buttermilk drop one at a time into the icing. Coat the entire buttermilk drop with the icing. Shake buttermilk drop slightly to remove some of the icing as you want a thin coating. Place on to cooling rack or serving dish lined with napkins. Let icing set for 15 minutes.

For best results you can serve them the next day. That way the flavors can settle and increase overnight.
Storage. 7 days in fridge. 1 month in freezer.
