Buttermilk Pancakes with Syrup

What you’ll need
All-Purpose Flour
Sugar
Salt
Baking powder
Unsalted butter
1 large egg (Room temp)
Whole milk (Room temp)
Buttermilk (Room temp)
Light corn syrup
Molasses
Vanilla extract
Butter extract

10-inch round Cast iron skillet

Making the syrup
Preheat fire to medium high heat.
Step 1- Add 1/3 cup light corn syrup, 1/3 cup water, 1/4 cup sugar, 1/4 teaspoon salt, and 1 tablespoon molasses. Stir all ingredients together. Let simmer for 3 minutes.


Step 2- Turn fire off. Add 1 tablespoon Unsalted butter, 1/4 teaspoon vanilla extract, 1/4 teaspoon butter extract. Stir until butter melts. Let syrup cool completely before serving. The Syrup will also thicken as it cools.
For best results- Make syrup the day before you make your pancakes.

Making the pancake batter
Step 3- Add 1 cup All-purpose flour, 1 tablespoon baking powder, 1/4 teaspoon salt, and 4 tablespoons sugar into a medium sized bowl. Stir all ingredients together.

Step 4- In a separate medium sized bowl, add 1/2 cup buttermilk (Room temp), 1/2 cup whole milk (Room temp), 1 large egg (Room temp), 3 tablespoons unsalted butter, 2 teaspoons vanilla extract and 1 teaspoon butter extract. Stir all ingredients until combined.

Step 5- Pour wet ingredients into fry ingredients. Stir with spoon until combined. Batter will be slightly lumpy and thick. That is normal. Let batter rest for 10 minutes.


Preheat fire to medium high heat.
Step 6- Let cast iron skillet get hot for 3 minutes. Add 1 teaspoon unsalted butter. Spread butter around the pan. Let butter melt.

Step 7- Pour 1/2 cup pancake batter into skillet. Let sear for 1 minute. Flip pancake over. Let sear for 1 minute. When bubbles start floating at the surface of pancake, that means it’s time to flip it. Once done place pancakes on to serving dish. Serve hot with 1 teaspoon salted butter and homemade syrup on top.
