Cheesy Oyster Bread

What you’ll need

1 pint of fresh Oysters (Thawed)
Bread flour
Sugar
Instant yeast
Salted butter
Bacon fat or olive oil
Parmesan cheese
Mozzarella cheese

Seasonings
Green onion
Garlic
Salt
Black pepper
Tony Chachere’s creole seasoning
Chef Paul’s seafood magic
Cayenne pepper or red pepper flakes
Dried thyme

Tools you’ll need.
Cheese shredder
Aluminum foil
8 by 8-inch baking pan

Preparation of ingredients
Seasonings

Step 1- Chop 2- or 3-ounces green onions, 1/2 of a green bell pepper, 1 clove garlic and a small amount of fresh parsley until minced. Make sure you rinse the green bell pepper and parsley before chopping.

Cheese
Step 2- Shred 8 ounces mozzarella cheese. Place into fridge.

Oysters
Step 3- Add Oysters into a mesh strainer with a measuring cup underneath it. Stir the oysters for 1 minute to release any juices. Once done you should have 1 cup oyster liquor. Place into fridge.

Making the bread
Step 4- Add 1 3/4 cups bread flour, 2 teaspoons sugar, 1 1/4 teaspoons instant yeast, and 1/2 or 1 teaspoon salt into a medium-sized bowl. Stir ingredients until combined.

Step 5- Add 3/4 cup warm water (120 to 125 degrees F.), and 1 tablespoon melted bacon fat or olive oil. Stir all ingredients with a sturdy spoon until mixture starts to come together.

Step 6- Lightly flour surface of your table. Add dough on top of table and knead for 8 to 10 minutes by hand. Form dough into a ball. Rub 1/2 or 1 teaspoon melted bacon fat or olive oil into the palm of your hands and rub on the dough. Let the dough rest for 15 to 20 minutes.

Step 7- Press dough down with your hands until it reaches a diameter of 6 to 7 inches. Rub 1/2 or 1 teaspoon melted bacon fat or olive oil into the palm of your hands and rub on the dough Cut deep slits into the dough using a knife.


Step 8- Spread 1/2 teaspoon melted bacon fat or olive oil into the 8 by 8 inch baking pan. Add dough into pan and let rise in a warm spot for 45 minutes to 1 hour.

Baking the bread (Part 1)
Preheat oven to 425 degrees.

Step 9- Place into a preheated 425-degree oven for 12 to 15 minutes. Remove bread from oven and let cool until warm or completely. You can also make the bread 1 to 2 days in advance.

Making the Oyster filling
Preheat fire to medium heat.

Step 10- Add 1 tablespoon salted or unsalted butter, and 1 tablespoon all-purpose flour or bread flour into a large saucepan. Stir continuously for 1 minute.

Step 11- Add 1/4 cup chopped green onion ends, and 1/8 or 1/4 cup chopped green bell pepper. Stir all ingredients together. Let sauté for 2 minutes stirring occasionally.

Step 12- Add 1 or 2 teaspoons chopped garlic, 1 cup oyster liquid (From the 1 pint of oysters), 1/8 teaspoon salt, 1/8 teaspoon black pepper, 1/8 teaspoon Tony Chachere’s creole seasoning, 1/8 teaspoon chef paul’s seafood magic, 1/4 teaspoon grandulated onion (Optional), 1/4 teaspoon grandulated garlic (Optional), 1/4 teaspoon dried thyme, 1 or 2 teaspoons chopped parsley, and 1/8 teaspoon Cayenne pepper or red pepper flakes. Stir all ingredients together. Let simmer for 4 to 6 minutes stirring occasionally.

Step 13- Add oysters and stir. Cover with lid and let simmer for 5 minutes, stirring occasionally. Make sure you break down some of the large pieces of oysters with a wooden spatula during the cooking process. Let cool until it’s warm.

Toasting the bread
Set oven broiler to high.

Step 14- Slice the bread in half. You should have a bottom and top slice of the bread. Place bread slices upside down onto an 11 by 17-inch baking pan. Melt 1 tablespoon bacon fat and 1 tablespoon salted or unsalted butter. Brush onto the bread using a pastry brush. Place into oven broiler for 2 to 3 minutes. Make sure you check the bread every 30 seconds to 1 minute to make sure it doesn’t burn. Once the bread is toasted remove from oven and let cool for 5 minutes.

Assembling the Oyster bread
Step 15- Sprinkle a small amount of the shredded mozzarella and parmesan cheese onto the bottom slice of the toasted bread. From there add all of the oyster filling on top of the bottom slice of the toasted bread. Add 1 tablespoon chopped green onion, followed by another small amount of the shredded mozzarella and parmesan cheese.

Step 16- Add the top slice of the toasted bread on top. Brush melted bacon far or salted or unsalted butter onto the bread. Sprinkle a small amount of the shredded mozzarella, parmesan cheese and 1/2 teaspoon chopped parsley on top of the bread as a final garnish.

Baking the bread (Part 2)
Preheat oven to 375 degrees.

Step 17- Add assembled Oyster bread into the same 8 by 8 inch baking pan. Cover pan with aluminum foil and poke holes into the top of the foil using a large fork.

Step 18- Place into a preheated 375-degree oven for 15 to 20 minutes. Once the baking time has ended remove from oven. Remove aluminum foil from the top of the pan and let the bread cool for 30 to 45 minutes before serving.
