Chicken Quesadillas

Makes 3 to 4 large Quesadillas

What you’ll need
1 and 1/2 pounds cooked skinless chicken thighs
4 large flour tortillas (9 inches diameter)
Mild cheddar cheese
Pepper Jack cheese
Vegetable or canola oil
Salted butter

Yellow onion
Green bell pepper

Tony Chachere’s creole seasoning

Ground cumin

Preparation of ingredients
Seasonings

Step 1- Chop half of a yellow onion. Rinse Green and Red bell peppers off with cold water. Chop half of a green bell pepper and half of a red bell pepper. Press 1 large clove of garlic with a garlic press or you can chop it with a knife until minced.


Cheeses
Step 2- Shred 5 ounces mild cheddar and 5 ounces pepper jack cheese using a cheese shredder. Add the cheeses into a medium-sized bowl. Mix the cheeses together using your hands. Once done cover the bowl with a lid and place into fridge.


Chicken thighs
Step 3- Remove the meat off the bones of the pieces of chicken. Place the chicken meat onto a chopping board and chop it into small bite sized pieces.


Chicken filling
Preheat fire to medium heat.

Step 4- Add 2 tablespoons salted butter, 1/2 cup chopped yellow onion, 1/2 cup chopped green bell pepper and 1/2 cup chopped red bell pepper. Stir all ingredients together. Let sauté for 5 minutes stirring occasionally.


Step 5- Add 1 clove pressed garlic, chopped chicken thigh meat, 1/4 teaspoon salt, 1/8 teaspoon black pepper, 1/4 teaspoon Tony Chachere’s creole seasoning, 1/4 teaspoon chef Paul’s poultry magic, 1/2 teaspoon chili powder and 1/2 teaspoon ground cumin. Stir all ingredients together. Let sauté for 1 to 2 minutes. Once done turn your fire off. Let cool for 5 minutes.


Assembling the Quesadilla
Preheat fire to medium heat.

Step 6- Add 1 tablespoon vegetable or canola oil into a large saucepan. Spread the oil around the saucepan. Let get hot for 30 seconds. Add tortilla and let sit for 30 seconds. Flip the tortilla over and let sit for 30 seconds. After 30 seconds flip the tortilla over again.


Step 7- Add shredded cheeses all around the tortilla. Add chicken filling onto one side of the tortilla. Make sure you spread the chicken filling around as evenly as possible. Take the side of the tortilla with the cheese on it and fold it over the side of the tortilla with the chicken filling on it. Once done press the Quesadilla with a spatula. Transfer the Quesadillas on to a serving dish.


To serve the Quesadillas, cut them into 4 pieces before serving. You can also serve the Quesadillas with condiments like sour cream, guacamole or salsa.
