Chicken and Spinach Pizza

What you’ll need
1 1/2 pounds cooked chicken
Whole wheat flour
Yellow cornmeal
Sugar
Salt
Instant yeast
Tomato paste

Tools you’ll need
Stand mixer
Food processor
Garlic press
12-inch diameter pizza pan

Preparation of ingredients
Seasonings and toppings

Step 1- Chop 2 ounces in weight of yellow onion red and green bell peppers. Rinse bell pepper before chopping. Press 3 cloves garlic with the garlic press.


Step 2- Rinse off mushrooms, tomato, and spinach. Slice 3 ounces of tomatoes into quarter pieces, 5 ounces in weight of mushrooms. Chop stems off spinach then chop the spinach leaves into small pieces.


Step 3- Add black olives into a mesh strainer. Take a fork and shred chicken meat from the chicken bones. If you are using cooked boneless chicken just shred the meat with a fork.


Marinara sauce
Preheat fire to medium heat.

Step 4- Add 1/2 tablespoon salted or unsalted butter, chopped yellow onion, Let sauté for 2 minutes. Next add 1 teaspoon pressed garlic, 4 ounces in weight of tomato paste, 1/2 cup water, 1/4 teaspoon salt, 1/8 teaspoon Tony Chachere’s creole seasoning, 1/8 teaspoon black pepper, 1/8 teaspoon dried thyme, 1/4 teaspoon dried oregano, 1/4 teaspoon dried basil, and 1/2 teaspoon sugar into a small pot. Stir all ingredients with a whisk until combined. Let cool completely. You can also make this ahead of time.


Whole wheat pizza crust
Step 5- Add 2 cups Whole wheat flour, 1 1/2 or 2 tablespoons raw sunflower seeds, 1 1/2 or 2 tablespoons flax seeds, 1 tablespoon sugar, 1 teaspoon instant yeast, and 1 teaspoon salt into stand mixer bowl fitted with dough hook attachment. Stir with a spoon until combined.


Step 6- Add 3/4 cup + 2 tablespoons warm water (Temp 120 to 125 degrees F) and 1 1/2 tablespoons olive oil or melted salted or unsalted butter. Mix on a medium low speed for 8 minutes.


Step 7- Lightly flour the surface of your table. Add dough on top of table and knead for 1 minute. Form the dough into a ball and let rest for 20 to 25 minutes.


Step 8- Spread 1 teaspoon olive oil around a 12-inch in diameter pizza pan. Sprinkle a very small amount (1 teaspoon) of yellow cornbread on top of the pizza pan and set aside.


Step 9- Press the dough down with your hands, stretching it as you press it down. Take a rolling pin and roll the dough into an 11-inch in diameter circle.


Step 10- Pick the dough up carefully with your hands and place on to the greased 12-inch in diameter pizza pan. From there stretch the dough from the middle until the edge of the dough reaches the edge of the pizza pan. Form the crust by making in indentation with your hands going one inch towards the center from the edge of the pizza dough. From there poke holes into the pizza dough with a fork. Do not poke the edge of the edge of the pizza dough (The crust). Let rest for 5 minutes.


Assembling and baking the pizza
Preheat oven to 450 degrees.

Step 11- Spread the Marinara sauce onto the top of the pizza dough with a large spoon. Sprinkle shredded parmesan cheese (2 or 3 tablespoons) on top of the marinara sauce.


Step 12- Add 1/8 or 1/4 cup chopped Red and Green bell peppers on top of marinara sauce. Followed by the black olives, 1/3 cup, Mushrooms (5 to 6 ounces), and cooked chicken meat (1/2 cup) on top of the marinara sauce.


Step 13- Add Chopped spinach (3 or 4 ounces), 1/8 cup shredded parmesan cheese, and the entire 8 ounces of shredded mozzarella cheese on top of the marinara sauce.
Step 14- Place into a preheated 450-degree oven, on the middle rack and bake for 12 to 15 minutes.


Garlic parmesan butter sauce
Step 15- Add 2 tablespoons melted salted butter, 2 to 3 teaspoons pressed garlic, and 1 heaping teaspoon shredded parmesan cheese into a food processor. Blend for 30 seconds.


Step 16- Remove pizza from oven. Brush the Garlic parmesan butter sauce onto the crust and on top of the pizza itself. Let cool for 5 minutes before serving.
