Crispy oven-baked Catfish

Makes 6 pieces of catfish

What you’ll need
2 pounds catfish
All-purpose flour
Yellow cornmeal
Plain breadcrumbs
large eggs (Room temp)
1 to 2 lemons
Seasonings
Salt
Black pepper
Tony Chachere’s creole seasoning
Chef Paul’s seafood magic
Granulated onion
Granulated garlic
Extra virgin olive oil spray

Tools you’ll need
11 by 17-inch baking pan
Aluminum foil
Citrus juicer
Pastry brush

Preparation of ingredients
Catfish 1

Step 1- Add catfish pieces into a strainer and rinse with cold water.


Lemon marinade
Step 2- Cut 1 or 2 lemons in half. Juice the halves of each lemon with the citrus juicer.


Step 3- Pour the lemon juice into a mesh strainer with a medium-sized bowl underneath it. Add 2 teaspoons Tony Chachere’s creole seasoning and stir with a whisk until combined.


Catfish 2
Step 4- Place catfish pieces onto a large chopping board. Brush the lemon marinade onto both sides of each piece of catfish. Add the catfish pieces along with the best of the lemon marinade into a large bowl. Cover with a lid and let marinade for 2 to 4 hours or overnight.


Seasoned egg mixture
Step 5- Add 4 large eggs (Room temp), 2 teaspoons chef Paul’s seafood magic, and 1 teaspoon of lemon juice into a medium-sized bowl. Stir all ingredients with a whisk until combined. Place into fridge.


Seasoned Bread crumb cornmeal and all-purpose flour batter
Step 6- Add 1 cup yellow cornmeal, 1 cup all-purpose flour, 1/2 cup plain breadcrumbs, 2 teaspoons salt, 1/2 teaspoon black pepper, 2 teaspoons Tony Chachere’s creole seasoning, 1 teaspoon chef Paul’s seafood magic, 2 teaspoons granulated onion, 2 teaspoons granulated garlic, and 1/2 teaspoon cayenne pepper into a large bowl. Stir all ingredients together and set aside.


Breading the catfish
Step 7- Coat 2 pieces of catfish at a time with the seasoned egg mixture and transfer the catfish pieces into the seasoned bread crumb cornmeal and all-purpose flour mixture. Cover the bowl and shake the bowl to coat the pieces of the catfish with the seasoned bread crumb cornmeal and all-purpose flour. Place the coated catfish onto a flat surface.


Step 8- Coat 2 pieces of the breaded catfish with seasoned egg mixture and transfer the breaded catfish pieces into the seasoned bread crumb cornmeal and all-purpose flour mixture. Cover the bowl and shake the bowl to coat the pieces of the breaded catfish with the seasoned bread crumb cornmeal and all-purpose flour. Place the breaded catfish onto a flat surface.


Step 9- Spray olive oil spray on to both sides of the breaded catfish.


Baking the catfish
Preheat oven to 400-degrees.

Step 10- Line the inside of the 11 by 17-inch baking pan with aluminum foil. Place the breaded catfish pieces inside the 11 by 17-inch baking pan.


Step 11- Place into a preheated 400-degree oven on the bottom rack. Bake for 25 to 30 minutes. Remove from oven. Let cool for 10 minutes before serving. You can reheat the catfish in an air fryer on 400-degrees for 5 to 10 minutes.
