What you’ll need

3 cups of All-Purpose flour or cake flour

3 Cups Sugar

1 teaspoon of Baking Powder

3 Sticks Unsalted Butter (Room Temp)

5 Large Eggs (Room Temp)

1 Cup 7up

2 Teaspoons of Lemon Extract

1 Large Lemon

Cake Glaze

Whole Milk

Confectioners Sugar

Tools you’ll need

15 Cup Bundt pan or a regular sized bundt pan

Cake sifter

Preparation of ingredients

Step 1- Add 3 Cups All-Purpose Flour or cake flour. Add 1 teaspoon on baking powder and sift all ingredients into large bowl. Mix all ingredients together

Step 2- Add 3 Sticks of Unsalted butter (Room temp) and 3 Cups Sugar. Mix for 7 minutes. Scrape down sides of bowl.

Step 3- Add 5 Large eggs (Room temp) one at a time and mix until combined. Scrape down sides of bowl.

Step 4- Rinse, Zest and cut one Lemon in half

Step 5- Add Lemon Zest, 2 Teaspoons of Lemon Extract, and Squeeze half of a lemon into cake batter. Mix until well combined.

Grease bundt pan with non stick baking spray

Preheat Oven to 325-Degrees  

Step 6- Add the All-Purpose Flour mixture and the 7UP into the batter 3 separate times. Mix on a medium low speed each time for 15 to 20 seconds or until combined. Scrape down sides of bowl.

Step 7- Add Cake batter into Bundt pan. Spread cake batter evenly around pan using the back of a spoon. Shake Bundt pan slightly. This will also help make the cake batter even in baking pan.

Step 8- Place cake into preheated 325-degree oven and bake for 1 hour and 15 minutes

Once taken out of oven toothpick inserted into the cake should come out clean. If it does not come out clean place cake back into oven for 10 additional minutes

Let cake cool completely before serving.

Step 9 – Once cooled, flip cake over onto serving dish

Making the Glaze

Step 10- In a small bowl Add 1 1/4 Cup of Confectioners’ Sugar, 3 tablespoons of Melted Unsalted butter, 3 Tablespoons of warm whole milk, and 1/4 teaspoon lemon extract.  Mix until well combined. Mixture should be slightly runny and creamy with no visible lumps.

Step 11- Once done pour icing over cake and let set for 15 minutes before serving.
