What you’ll need

6oz Pecan halves

Sugar

12 fl oz of Evaporated Milk

Vanilla Extract

Unsalted Butter

Tools you’ll need

Parchment Paper

Preparation of ingredients

Step 1- Chop Pecan halves in half

Step 2- Place a long sheet of parchment paper on the top of your table.

***Preheat fire to medium high heat***

Step 3- Add 1 1/2 Cup Sugar, 1 1/2 Cup Evaporated milk, 1/2 Stick unsalted butter(Melted), and 2 teaspoons vanilla extract. Stir all ingredients together. Let come to a boil.

Step 4- Stir mixture for 12 minutes. Mixture will rise some. After 12 minutes your mixture will cook down and resemble the following picture below. Pay attention to the boil pattern in the picture. That will let you know that the pralines are ready. (VERY IMPORTANT)

Step 5- Add 1 1/2 Cup chopped pecans. Stir all ingredients for 6 minutes or until mixture thickens slightly. If mixture thickens too much add 1 tablespoon whole milk and stir all ingredients together. This process will thin the praline mixture out.

Step 6- Place large spoonfuls of Praline mixture on top of the parchment paper. Let cool for 1 hour before serving. This will allow the candy to settle and the flavors to increase.

Troubleshoot- If your pralines do not harden up remove off of parchment paper and place back into your pot with fire preheated to medium high heat. Let Pralines melt first then add 1 teaspoon of vanilla extract and 1 tablespoon of evaporated or whole milk. Let come to a simmer. Let simmer for 5 minutes. Place pralines on to parchment paper and let cool for 30 minutes before serving.
