Apple Pie from scratch (2018 recipe)

What you’ll need
6 Large Granny Smith Apples
1 Large Lemon
Unsalted butter (Room temp)
Vegetable shortening (Room temp)
1 Large egg (Room temp)
All-Purpose flour
Sugar
Brown sugar
Salt
Cornstarch
Vanilla extract
Cinnamon
All Spice

Tools you’ll need
9.5 round deep dish pie pan
Rolling pin
Fruit peeler
Apple corer/Slicer
Pastry cutter

Making the pie crust
Note- Butter must be slightly soft. You can also use this recipe to make 2 pie shells.

Step 1- Add 3 cups All-purpose flour, 4 tablespoons sugar and 1/2 teaspoon salt. Stir all ingredients together.

Step 2- Add 9 tablespoons unsalted butter (Room temp), and 9 tablespoons vegetable shortening (Room temp). Cut the butter and the shortening into the flour using the pastry brush.

Step 3. Add 1/2 Cup cold water. Stir until mixture forms a dough. Place into the fridge for 30 minutes or until you are ready to roll the dough out.

Preparing the Apples to make the filling.
Step 4- Peel all 6 apples using the apple peeler. Place the apple corer/slicer on top of each apple and press down firmly. Cut each apple slice in half along the length. Discard all of the Apple cores.

Step 5- Add Apples into a large bowl. Cut lemon in half and squeeze half of it on top of the apple slices. Toss apple slices with your hands. This will prevent apples from turning brown.

Making the Apple filling
Step 6- Add 1/2 Cup sugar, 1/2 cup brown sugar, 3 tablespoons cornstarch, 1 teaspoon cinnamon, 1/4 teaspoon all spice and 1/4 teaspoon salt. Stir all ingredients continuously for 5 minutes as apples will release their own juices.

Step 7- Add apple slices into strainer with a bowl underneath it. The juices released by the apples will be used to make the filling.

***Preheat fire to medium high heat***
Step 8- Add 3 tablespoons unsalted butter into a large pot. Let the butter melt.

Step 9- Add juices released from the apples and stir. Let come to a simmer first then let simmer for 2 minutes or until mixture thickens.

***Turn fire off***
Step 10-Add apple slices and 2 teaspoons vanilla extract. Stir all ingredients together. Let the filling cool completely.

Preparing the Pie crust
Step 11- Cut pie crust in half. One half will be used for the top crust and the other half will be used for the bottom crust.

Bottom crust
Step 12- Lightly flour surface of table. Place ball of dough on top of table and flatten dough with the palm of your hand forming a flat circle.

Step 13- Roll dough into a 13-inch diameter circle using the rolling pin. Once done carefully roll dough onto the rolling pin.

Step 14- Add rolling pin onto pie pan and carefully roll the dough on to the pie pan. Press along the sides and bottom of the pie pan allowing the crust to fit inside the pan. Cut excessive dough using kitchen scissors while leaving 1 1/2 inches of dough hanging.

Step 15- Add cooled apple filling into the pie pan.

Top crust
Step 16- Lightly flour surface of table. Place ball of dough on top of table and flatten dough with the palm of your hand forming a flat circle.

Step 16- Roll dough into a 13-inch diameter circle using the rolling pin. Once done carefully roll dough onto the rolling pin.

Step 17- Add rolling pin onto pie pan and carefully roll the dough on top of the pie pan. Cut excessive dough using kitchen scissors while leaving 1 1/2 inches of dough hanging.

Forming and decorating the crust
Step 18-Roll the edge of the top and bottom crust under the edge of the pie pan.

Step 19- Decorate the edge of your pie crust with your two fingers and the end of a butter knife. Push outward using your two fingers while pushing inward with the end of a butter knife. You can decorate your pie crust the way you like.

Step 20- Place a sharp knife into the center of the pie and twist it around. This will make a small hole at the top of the pie.

Step 21- Cut 4 slits on top of the pie. Each slit should be 2 1/2 inches long. Take the knife and push along the edges of the slits, creating an opening which will allow the steam to escape during the baking process.

Adding the finishing touches to the crust before baking
Step 22- Whisk 1 large egg.

Step 23- Add 2 tablespoons sugar and 1 teaspoon cinnamon into a small bowl. Stir all ingredients together.

Step 24- Slightly dip the pastry brush into the egg. Lightly brush the top of the crust with the egg. Sprinkle cinnamon sugar mixture on top of the crust.

Baking your Apple pie
Step 25- Place pie into a preheated 350-degree oven for 1 hour.

Step 26- Remove pie out of oven. Let cool completely before serving.
