Sweet Potato Pie Squares (Thin version)

What you’ll need

3 Large Sweet Potatoes

2 Large Eggs (Room temp)

Evaporated Milk

Sugar

All-Purpose Flour

Salt

Unsalted butter (Room temp)

Vegetable shortening (Room temp)

100% Pure Vanilla Extract

Cinnamon

Nutmeg

All Spice

Tools you’ll need

11×17 inch baking pan

9×13 inch baking pan

Plastic wrap

Making the Pie crust

Step 1 In a large Bowl add 2 Cups of all-Purpose Flour, 3 Tablespoons Sugar, 1/4 Teaspoon Salt. Mix until combined.

Step 2 Add 6 tablespoons of Unsalted Butter (Room temp) 6 tablespoons of vegetable shortening (Room temp) Take Pastry Blender and cut butter and shortening into Flour. Once finished Dough should resemble coarse crumbs.

Step 3 Add 1/3 cup of cold water. Mix with a spoon until mixture forms into a dough. Once formed into a dough knead 5 times.

Step 4 Wrap Dough with plastic wrap and place in fridge for 30 minutes.

***Make sure you let your dough come to room temperature first before rolling out***

***If the plastic wrap doesn’t stick to your table, then sprinkle a little all-purpose flour on the surface of your table. ***

Step 5 Line the top of your table with plastic wrap. Take Pie Dough out of fridge and place on table.

Step 6 Roll pie dough into ball, press down into the center of the dough with the palm of your hand. Form dough into a rectangle. Lightly sprinkle flour on top of your dough. Roll dough into a large rectangle. To make sure it fits in your pie shell, place pie pans on top of dough. Dough should be 3 or more inches wider and longer than the actual baking pan

Step 7 Cut and 11×17 inch or a 9×13 inch square using a knife while the dough is on the table. This will allow the dough to fit into the baking pan perfectly.

Step 8- Place dough into your baking pan

Step 9- Once done place pie crust into freezer for 40 minutes.

Preparing your sweet potato pie batter

***Preheat fire to medium high heat***

Step 10 In a large pot filled with water place the 3 Sweet Potatoes in it and bring to a boil. Boil Sweet Potatoes for 1 hour and 10 minutes

Step 11 Once your sweet potatoes are finished the boiling process, place in a large bowl and let cool for 2 hours. If you do not want to do this step place sweet potatoes in cold water.

Step 12 Once Sweet Potatoes are cooled, Peel the skin off with butter knife.

Step 13 Once Peeled, Smash sweet potatoes until creamy. Should have between 3 and 3 1/2 cups mashed sweet potatoes.

***Preheat oven to 350 Degrees***

Step 14 Mix sweet potatoes with hand mixer for 30 seconds. Remove mixer out of batter. If there’s any strings on the beaters rinse off and repeat this step 5 to 6 more times or until all strings have been removed.

Step 15 Add two eggs and mix until well combined.

***Make sure you scrape down the sides of your bowl. ***

Step 16 Add 5 tablespoons melted unsalted butter. Mix until well combined.

Step 17 Add 1 2/3 Cups of Sugar. Mix until well combined

Step 18 Add 3/4 Cup of Evaporated Milk, 2 teaspoons of Vanilla extract, 1/2 teaspoon of Cinnamon, 1/8 teaspoon of nutmeg and 1/8 teaspoon of All Spice. Mix until well combined.

Step 19 Pour sweet potato pie batter into your prepared baking pan. Spread batter around pan using the back of a spoon. To make batter even shake your baking pan slightly.

Step 20 Place into a preheated 350-degree oven. Bake for 30 to 40 minutes.

Step 21 After 30 to 40 minutes remove pie out of oven. Let cool for about 4 hours before serving.

Step 22- To remove pie out of pan place parchment paper on top of the pie. Flip pie over. Place something sturdy like a large chopping board in place of the pan. Remove pan then flip pie back over to opposite side. Remove parchment paper.

Step 23- Cut pie into squares using a knife. You can cut up to 24 squares.
