Fried Chicken Tenders with Homemade Barbecue sauce

Note- Recipe can be doubled. Just double amount of chicken tenders and the barbecue sauce.
What you’ll need
2 pounds Chicken Tenderloins
All-Purpose Flour
3 large eggs
48 Fl ounces Canola oil
6 ounces Tomato paste
Vinegar
Liquid smoke
Molasses
Honey
Sugar

Tony Chachere’s Creole seasoning
Chef Paul’s Poultry magic
Onion powder
Garlic Powder
Cayenne pepper

Making the Barbecue Sauce
Step 1- Add 1/2 Cup Tomato paste, 2 tablespoons Vinegar, 2 tablespoons liquid smoke, 2 tablespoons molasses, 2 tablespoons honey, 1/2 teaspoon salt and 1/2 teaspoon cayenne pepper (Optional) into a medium sized bowl. Stir with whisk until combined and set side.

Troubleshoot- Add 2 tablespoons tomato paste if barbecue sauce is too thin. Add 1 teaspoon vinegar or water if mixture is too thick. Stir until combined.

Preparation of the chicken tenders
Step 2- Add chicken tenders into strainer. Rinse with cold water.

Step 3- Pat the chicken tenders dry with napkins. Transfer into large bowl.

Step 4- Add 1/4 teaspoon salt, 1 teaspoon Tony Chachere’s Creole seasoning, 1 teaspoon Chef Paul’s Poultry magic, 1 teaspoon onion powder, and 1 teaspoon garlic powder. Coat the seasonings on to the chicken with your hands. Cover with lid and place into fridge for 1 hour or overnight to marinate.

Preparation of the batter
Step 5- Add 3 cups all-purpose flour, 2 teaspoons salt, 1 tablespoon Tony Chachere’s Creole seasoning, 2 teaspoons Chef Paul’s Poultry magic, 1 tablespoon onion powder, 1 tablespoon garlic powder, 2 teaspoons cayenne pepper, and 1 1/2 teaspoons dried thyme. Stir all ingredients together. Set aside.

Step 6- Add 3 large eggs, 1/4 teaspoon salt and 1/8 teaspoon Tony Chachere’s creole seasoning into a medium sized bowl. Stir with whisk until combined.

Step 7- Add 48 Fl ounces canola oil into medium sized pot. Let get hot for 15 minutes. If using a deep fryer preheat to 350. Let get hot for 15 minutes.

Note- Make sure you have a serving plate lined with napkins. You will place your chicken tenders on the serving dish once they are finished frying.

Frying the chicken Tenders

Step 8- Add 4 chicken tenders into egg mixture. Coat the chicken tenders with the egg mixture. Add Chicken tenders into all-purpose flour batter. Cover with lid and shake bowl coating the chicken tenders with the all-purpose flour batter.

Step 9- Add chicken tenders into hot oil. 4 at a time. Let fry for 5 minutes.

Note- Frying times vary. It can take 5 to 12 minutes for your chicken tenders to finish frying. If you chicken tenders float at the surface of the oil, they are finished frying. You can also fry it for 2 additional minutes just to be on the safe side.

Step 10- Transfer chicken tenders on to serving dish lined with napkins. Let cool for 5 minutes before serving.
