Fried Chicken wings

What you’ll need
2 Pounds chicken wingettes and chicken drumettes wing portions
All-purpose flour
3 large eggs
48 Fl oz’s Canola oil

Seasonings
Salt
Tony Chachere’s Creole seasoning
Chef Paul’s poultry magic
Cayenne pepper
Onion powder
Garlic powder
Dried Thyme

Preparation of ingredients
Cleaning, Seasoning, and marinating the chicken.
Step 1-Add chicken wingette and drumette wing portions into a strainer and rinse with cold water.

Step 2- Transfer chicken into a large bowl. Add 1/4 teaspoon salt, 1 teaspoon Tony Chachere’s creole seasoning, 1 teaspoon Chef Paul’s poultry magic, 1 teaspoon onion powder, 1 teaspoon garlic powder, 1 teaspoon cayenne pepper and 1 teaspoon dried thyme. Coat the seasonings on to the chicken. Place in fridge for 1 hour or overnight.

Preparing the egg mixture and seasoned all-purpose flour batter.
Step 3- add 3 eggs into a medium sized bowl. Add 1/4 teaspoon salt and 1/4 teaspoon Tony Chachere’s creole seasoning. Whisk the eggs together and set aside.

Step 4- Add 3 cups All-purpose flour, 2 teaspoons salt, 1 tablespoon Tony Chachere’s creole seasoning, 2 teaspoons Chef Paul’s poultry magic, 1 tablespoon onion powder, 1 tablespoon garlic powder, 1 tablespoon cayenne pepper, and 2 teaspoons dried thyme. Stir all ingredients together and set aside.

Preheat fire to medium high heat.
Step 5- Add 48 fl oz’s Canola oil into a medium sized pot. Let get hot for 12 to 15 minutes. If you are using a deep fryer, preheat to 350 degrees and let get hot for 12 to 15 minutes.

Frying your chicken
Step 6- Add 6 pieces of chicken into egg mixture and coat chicken with egg mixture. Remove chicken from egg mixture and add into the seasoned all-purpose flour batter. Cover with lid and shake the bowl to coat the chicken with the batter.

Step 7- Add 6 pieces of chicken into hot oil. Let fry for 10 to 12 minutes. The chicken will start to float at the surface of the oil at the 5-minute mark. This will let you know that your chicken is almost done.

Step 8- Remove chicken out of hot oil and place on to a serving dish lined with napkins. Let cool for 5 minutes before serving. Enjoy!
