
Makes 4 sandwiches (The amount of Pork chops can be doubled to serve more)

What you’ll need
2 pounds center cut bone-in pork chops
All-purpose flour
Large eggs (Room temp)
Vegetable or canola oil
Mayonnaise
Crystal Hot wings
Seasonings
Salt
Black pepper
Tony Chachere’s creole seasoning
Chef Paul’s poultry magic
Granulated onion
Granulated garlic
Cayenne pepper
Tex Toast bread or any other type of bread of your choosing
Tools you’ll need
Cooling rack with an 11 by 17-inch baking pan underneath it
10-inch round cast iron skillet
Preparation of ingredients
Pork chops
Step 1- Rinse each pork chop off with cold water. Pat each pork chop dry with napkins.
Step 2-Place the pork chops onto a flexable chopping board. Lightly sprinkle salt, black pepper, Tony Chachere’s creole seasoning, chef Paul’s poultry magic, granulated onion, granulated garlic, and cayenne pepper onto both sides of the pork chops. Add the pork chops into a medium-sized bowl. Cover the bowl with a lid and let the pork chops marinate into fridge for 4 hours or overnight.
Seasoned egg batter
Step 3- Add 4 large eggs (Room temp), 1/8 teaspoon Tony Chachere’s creole seasoning, 1/8 teaspoon chef Paul’s poultry magic, 1/4 teaspoon granulated onion, 1/4 teaspoon granulated garlic, and 1/4 teaspoon cayenne pepper into a medium-sized bowl. Stir all ingredients together with a whisk until combined and set aside.
Seasoned all-purpose flour batter
Step 4- Add 3 cups all-purpose flour, 2 teaspoons salt, 1/4 or 1/2 teaspoon black pepper, 2 teaspoons Tony Chachere’s creole seasoning, 2 teaspoon chef Paul’s poultry magic, 2 or 3 teaspoons granulated onion, 2 or 3 teaspoons granulated garlic, and 2 teaspoons cayenne pepper into a large bowl or tubberware with a lid. Stir all ingredients together and set aside.
Heating the oil
Preheat fire to medium heat.
Step 5- Add 3 and 1/2 cups vegetable or canola oil into a 10-inch round cast iron skillet. Let get hot for 12 to 15 minutes. The oil will appear to simmer at the top, that means the oil is hot enough to fry.
Note- Make sure you have a cooling rack with an 11 by-17 inch baking pan underneath it ready before frying your pork chops.
Breading and frying the pork chops
Step 6- Take the pork chops one at a time and coat them first with the seasoned egg batter. Remove them from the batter and shake slightly. Transfer the pork chops into the seasoned all-purpose flour batter. Cover the bowl with a lid and shake the bowl to coat the pork chops with the batter.
Step 7-Remove the pork chops from the seasoned all purpose flour batter and shake each pork chop as you want a light coating. Transfer the pork chop back into the seasoned egg batter. Coat the pork chop with the batter by simply flipping it over onto each side of the pork chop. Again, transfer the pork chops into the seasoned all-purpose flour batter. Cover the bowl with a lid and shake the bowl to coat the pork chops with the batter.
Step 8- Remove the pork chops from the seasoned all purpose flour batter and shake each pork chop as you want a light coating. Add the pork chop into the hot oil. Only fry 1 pork chop at a time. If you are using a deep fryer, you can fry more than 1 pork chop. Let the pork chops fry for 3 to 4 minutes on each side. Frying times vary depending on the size and thickness of the pork chop, your skillet or deep fryer and the temperature of the oil.
Step 9- Remove the pork chops from the hot oil with stainless steel tongs. Wait a few seconds to allow the grease to drain back into the skillet. Transfer the pork chops onto a cooling rack with an 11 by 17- inch baking pan underneath it. Let the pork chops cool for 5 to 10 minutes.
Assembling the sandwiches
Step 10- For each sandwich you should have 2 slices of bread. Coat 4 slices of the bread with mayonnaise using a butter knife. Add a small amount of Crystal hot sauce onto each slice of the bread that was coated with the mayonnaise and spread that onto the bread using a butter knife.
Step 11- Place the fried pork chop onto the slices of bread that have not been coated with the mayonnaise which would be the bottom slice of bread. Add the slice of bread that has been coated with the mayonnaise and hot sauce on top of the fried pork chop with the side that has been coated going face down onto the pork chop. Press down gently with your hands. After that the pork chops sandwiches are ready to be served.
