Old fashioned grits
Water

Grits (Part 1)
Preheat fire to medium heat.
Step 1- Add 4 and 1/2 cups water, 1 cup old fashioned grits, 1/2 or 1 teaspoon salt and 1/8 teaspoon black pepper into a medium-sized pot. Let the mixture come to a slight simmer. Turn your fire down to medium low heat and cover your pot with a lid. Let simmer for 15 to 18 minutes stirring frequently.
Eggs
Step 2- Add 7 large eggs (Room temp), 1 tablespoon melted salted butter, 1/4 teaspoon salt and 1/8 teaspoon black pepper into a medium-sized bowl and stir with a whisk until combined.
Preheat fire to medium heat.
Step 3- Let a large saucepan or frying pan get hot for 1 to 2 minutes. Spread a small amount of salted butter into the saucepan of skillet. Add the beaten eggs and wait about 15 seconds. From there stir continuously for 1 to 2 minutes or until the eggs are fully cooked.
Smoked sausage
Step 4- Cut the D&D smoked sausage into 6 large pieces. Each piece should be 3 and 1/2 inches long. Cut each piece of smoked sausage in half in the middle going down the length without cutting through the skin on the opposite side.
Searing the smoked sausage
Preheat fire to medium heat.
Step 5- Let a large saucepan or frying pan get hot for 1 to 2 minutes. Add smoked sausage pieces into the hot pan or skillet. Let sear for 2 minutes on each side and place onto a serving dish to cool.
Cheese (Optional)
Step 6- If you are making cheese grits, shred 3.5 ounces in weight of mild cheddar cheese and place the shredded cheese in the fridge.
Toasting the bread
Step 7- Add 4 to 6 slices of bread 2 at a time into a toaster. Let the bread toast for 20 to 30 seconds or until the bread is a light golden brown. Place the bread slices onto a serving dish. Melted 4 tablespoons salted butter. Brush each slice of toasted bread with the melted butter using a pastry brush and set aside.
Grits (Part 2)
Step 8- Turn your fire on your stove off. Add 1 stick salted butter and cover the pot with a lid until the butter melts. Once the butter melts, stir all the ingredients together. Let cool for 5 to 10 minutes before serving.
Cheese grits (Optional step)
Step 9- Add 3.5 ounces in weight of shredder mild cheddar cheese and stir with a sturdy spoon until the cheese melts in the grits. From there the cheese grits are ready to be served.
