What you’ll need
3 and 1/2 pounds black seedless grapes
2 pounds medium-sized lemons
1 gallon Spring water
Sugar
Salt
Tools you’ll need
Food processor
Mesh strainer
Citrus juicer
Large sturdy spoon
12-quart pot
1 gallon plastic pitcher
Preparation of ingredients
Grapes and lemons
Step 1- Rinse 3 and 1/2 pounds black seedless grapes and 2 pounds medium-sized lemons off with cold water.
Grape puree
Step 2- Remove each grape off of the stems and place the grapes into a separate bowl. Inspect the grapes. Some grapes may still have a small amount of the stem attached. Remove any leftover stems from the grapes.
Step 3-Add half the grapes into a large food processor. Blend for 20 to 30 seconds. Add the 2nd half of the grapes into the food processor. Blend for 20 to 30 seconds.
Lemons
Step 4- Take a knife and cut each lemon in half. Juice each half of each lemon using the citrus juicer. Take the lemon juice and pulp that’s leftover in the citrus juicer and add it into a measuring cup. You should have 2 cups of the lemon juice and lemon pulp combined.
Preheat fire to medium heat.
Step 5- Add the grape puree, 1 and 1/3 cups sugar, 1/8 teaspoon salt and squeeze half of a lemon into a medium-sized pot. Stir all ingredients together. Let simmer for 15 minutes. Once done turn your fire off and let the mixture cool completely.
Assembling and pasteurizing the lemonade
Preheat fire to medium heat.
Note- The pasteurization process heats the liquid to a certain temperature preventing spoilage and extending the shelf life of the lemonade.
Step 6- Add 3 quarts spring water, grape puree and lemon juice and pulp into a large 12-quart pot and stir. Let the mixture get hot for 12 to 15 minutes. Once done turn your fire off and let the lemonade cool completely.
Straining the lemonade
Step 7- Pour the cooled lemonade into a mesh strainer with a stainless-steel bowl underneath it. Stir and press the pulp into the mesh strainer. This will allow the lemonade to drain into the bowl. Continue to do this until all of the lemonade is strained.
Step 8- Place a funnel inside of a 4 quart plastic pitcher. Pour the strainer lemonade into the funnel. This is allow the lemonade to drain into the pitcher without any spills or leaks. Continue to pour the strained lemonade into the pitcher until the pitcher is full.
Step 9- Remove the funnel from the pitcher and place a lid on top of the pitcher. Place the lemonade into the fridge to cool for 6 to 8 hours or overnight before serving. The lemonade can last up to 2 weeks or longer in your fridge.
