King Cake Doughnuts

Makes 9 to 12 doughnuts.

What you’ll need

Bread flour
Sugar
Salt
Instant yeast
Unsalted butter (Room temp)
Large eggs (Room temp)
Whole milk (Room temp)
Canola oil
Vanilla extract
Butter extract
Almond extract
Cake batter extract
Cinnamon
Confectioners’ sugar
Purple, green gold sugar sprinkles

Tool’s you’ll need
Stand mixer
Large saucepan, frying pan or deep fryer
Thermometer (If using the saucepan or frying pan)
3 1/2-inch diameter doughnut cutter
Cooling rack

Preparation of ingredients
Dry ingredients

Step 1- Add 2 cups bread flour, 2 tablespoons sugar, 1 1/2 teaspoons instant yeast, 2 teaspoons cinnamon, and 1/4 or 1/2 teaspoon salt into stand mixer bowl. Stir with a spoon until combined and set aside.


Wet ingredients
Step 2- Add 2/3 cup warm whole milk (Temp 120- or 125-degrees F.), 4 tablespoons melted unsalted butter, 1 large egg (Room temp), 1 teaspoon vanilla extract, 1/2 teaspoon butter extract, and 1/2 teaspoon cake batter extract into a separate medium-sized bowl. Stir all ingredients with a whisk until combined and set aside.


Assembling the dough
Step 3- Pour wet ingredients into dry ingredients. Make sure your stand mixer is fitted with the dough hook attachment. Mix on a medium-low speed or according to your stand mixer’s instructions on mixing doughs for 8 to 10 minutes.


Step 4- Lightly flour the surface of your table. Add dough on top of table and knead for 1 to 2 minutes. Form into a ball and let the dough rest for 15 to 20 minutes.


Step 5- Press the dough down until it’s 1/4 of an inch thickness. Cut 9 to 12 pieces of dough out using the 3 1/2-inch diameter doughnut cutter.


Step 6- Spread 1/2 or 1 teaspoon vegetable or canola oil onto an 11 by 17-inch baking pan. Stretch each doughnut piece horizontally and add onto the baking pan. Let sit in a warm spot for 20 to 25 minutes.


Heating the oil
Preheat fire to medium heat. If you are using a deep dryer preheat it to 350 degrees.
Step 7- Add 48 Fl ounces of vegetable or canola oil into large saucepan. If you are using a deep dryer, add oil according to the instructions of your deep fryer. Let the oil get hot until it reaches a temperature of 350-degrees.


Frying the doughnuts
Note- Make sure you have your cooling rack with a baking pan underneath it ready.
Step 8- Carefully remove the doughnuts from the baking pan without deflating them and add them into hot oil. Let fry for 30 seconds on each side.


Step 9- Remove doughnuts from hot oil and place onto a cooling rack with a pan underneath it. Let cool for 5 minutes.


Making the icing
Step 10- Add 1 1/2 cups confectioners’ sugar, 4 tablespoons warm whole milk, 4 tablespoons melted unsalted butter, 1/2 teaspoon vanilla extract, 1/2 teaspoon butter extract, 1/4 teaspoon almond extract, 1/8 or 1/4 teaspoon cinnamon and a light sprinkle of salt into a small bowl. Stir all ingredients together with a whisk until the icing is creamy and smooth, with no visible lumps.


Decorating the doughnuts
Step 11- Dip each doughnut into the icing and swirl it in the icing. Only one side of the doughnut should be coated with the icing. From there place the doughnut back onto the cooling rack.


Step 12- Sprinkle purple, green and gold sugar sprinkle on top of the icing on each doughnut. Let set for 5 to 10 minutes and they are ready to be served.
