McKenzie’s Traditional King Cake

About this recipe- This type of King Cake consists of a Brioche style bread with a simple syrup and purple green and gold sugar sprinkles on top. No icings or fillings added.

What you’ll need
Bread flour
All-purpose flour
Sugar
Salt
Instant yeast
Salted or unsalted butter (Salted butter preferred)
Whole milk (Room temp)
Large eggs (Room temp)
Vanilla extract
Butter extract
Almond extract

Preparation of ingredients
Dry ingredients

Step 1- 1 and 3/4 cups bread flour, 1 and 3/4 cups all-purpose flour, 1/3 cup sugar, 2 and 1/2 teaspoons instant yeast, and 1/4 teaspoon salt into stand mixer bowl. Stir all ingredients together.


Wet ingredients
Step 2- Add 1 and 1/4 cups warm whole milk (Temp of milk should be 115 to 120 degrees F.), 1 stick salted butter melted, 2 large eggs (Room temp), 2 egg yolks (Room temp), 1 teaspoon vanilla extract, and 1/2 teaspoon butter extract into a medium sized bowl. Stir all ingredients with a whisk until combined.


Dough
Step 3- Pour the wet ingredients into the dry ingredients. Mix on a medium low speed or according to the instructions on mixing doughs for 4 to 5 minutes. Once done let the dough sit in the mixing bowl for 2 minutes. Dough will be sticky.


Step 4- Lightly flour the surface of your table. Add dough on top of table. Sprinkle flour on top of the dough. Knead the dough for 1 to 2 minutes. If the dough still sticks incorporate the flour sprinkled on top of top of the table into the dough while kneading it. Form the dough into an oval shape and let the dough rest for 15 to 20 minutes.


Shaping the dough
Step 5- Press the dough down with your hands. Stretch the dough out with your hands into a 29- to 25-inch-long strip of dough. From there bring the ends of the dough together and combine them. Form the dough into a large rectangle.
Spray your baking pan with Baker’s joy non-stick baking spray.


Step 6- Add the dough into your baking pan. Shape the dough into a hollow rectangle again. Let the dough rise for 45 minutes to 1 hour. If you are using all-purpose flour, let the dough rise for 1 hour and 20 minutes.


Preheat oven to 425 degrees F.
Step 7- Place into a preheated 425-degree oven on the middle rack. Bake for 12 minutes. Once the baking time has ended, remove the bread from the oven.


Simple syrup
Preheat fire to medium heat.
Step 8- Add 1/4 cup sugar and 1/4 cup water. Stir and let come to a simmer for 3 minutes. Turn fire off. Add 2 tablespoons salted butter and stir until the butter melts. Add 1/2 or 2 teaspoon vanilla extract, 1/2 teaspoon butter extract, and 1/4 teaspoon almond extract. Stir all ingredients together until combined. Let cool for 5 minutes.


Decorating the King cake
Step 9- Generously brush the simple syrup on top of the bread. From there Sprinkle the purple, green and gold sugar sprinkles on top of the bread. Wait about 5 to 10 minutes and after that the King Cake is ready to be served.


Storage- Store the King Cake in a large clear plastic bag. It can be stored at room temp for 3 days, 7 days in the fridge and up to 3 months in the freezer.
