New Orleans Egg and Rice

What you’ll need
3 Large Eggs (Room temp)
1 1/2 cups cooked Rice
Salted butter
Seasonings
Green onion
Salt
Black pepper
Tony Chachere’s creole seasoning
1/2-pound Smoked Sausage (Optional)

Notes- You can double or quadruple the ingredients for this recipe. You can also add more seasoning if you like.


Step 1- Chops ends to green onion set aside. If you are adding smoked sausage, chop 1/2 pound of smoked sausage. Cut each slice into quarter pieces. Set aside.


Step 2- Add 3 large eggs, 1/8 teaspoon salt, 1/8 teaspoon pepper, and 1/8 teaspoon Tony Chachere’s creole seasoning. Stir all ingredients with a whisk until combined.


Preheat fire to medium high heat
Step 3- Add 1 to 3 tablespoons salted butter and 1/3 cup chopped green onions into a skillet. Set sauté for 3 minutes.


Step 4- Add 1 1/2 cups cooked rice and seasoned egg mixture. Turn fire off and stir for 30 seconds. By the cast iron pan being hot it’ll cook the eggs.


Step 5- Add Salt, black pepper and Tony Chachere’s creole seasoning to taste. Stir all ingredients together.
