New Orleans style boiled corn

What you’ll need
8 pounds large corn cobbs
Salted butter (Used as a garnish)
Seasonings
Louisiana or Zatarain’s Shrimp and crab boil
1 medium-sized yellow onion
2 or 3 ribs Celery
1 Green bell pepper
1 pod Garlic
1 medium-sized lemon

Box fan or kitchen ventilation system

Preparation of ingredients
Seasonings

Step 1- Chop 1 medium-sized yellow onion, 1 green bell pepper, 2 or 3 ribs celery, and 1 lemon into quarter pieces. Make sure you rinse off the green bell pepper, celery and lemon before chopping. Take a pod of garlic and turn it on it’s side. Cut the top portion of the garlic off with a knife. Once done set all chopped seasonings and lemon aside.


Corn cobbs
Step 2- Remove the leaves off of each corn cob. Rinse each corn cob off with cold water. Chop 1-inch off of both ends of each corn cob. From there chop each corn cob in half and set aside.


Boiling the corn cobs
Preheat fire to medium heat.

Note- Make sure you have your box fan placed into your kitchen window with the air going outwards. This will help remove the strong aroma and humidy caused when boiling the corn.
Step 3- Add 4 quarts water into an 8 or 15-quart pot and let come to a simmer. Add 2/3 or 3/4 cup Louisiana or Zatarain’s shrimp and crab boil, chopped yellow onion, chopped celery, chopped green bell pepper, 1 pod garlic with tip cut off and chopped lemons. Stir all ingredients together and let simmer for 12 minutes stirring occasionally.


Step 4- Add corn cobbs and stir. Let simmer for 10 to 12 minutes stirring occasionally.


Turn fire off.
Soaking the corn cobs

Note- One of the most important things when it comes to boils is that you have to let the seafood or vegetables soak. If you take the corn cobs out and started eating them, they would taste bland. When soaked, the corn cobbs will absorb all of the flavors.


Step 4- Once the cooking process has ended, turn your fire off and cover your pot. Let the corn cobbs soak for 1 to 2 hours.


Step 5- Melt 3 tablespoons salted butter and brush each corn cob off very lightly with the butter before serving.
