What you’ll need
3 1/2 pounds turkey wings
Salted butter
Two 6 ounce cans tomato paste
Vinegar
Hickory liquid smoke
Mesquite liquid smoke
Molasses
Honey
Sugar
Brown sugar

Tony Chachere’s creole seasoning
Chef Paul’s poultry magic
Granulated onion
Granulated garlic
Cayenne pepper

10 by 13 inch deep dish glass pan
Aluminum foil
Large fork
Pastry brush
Making the barbecue sauce
Step 1- Add two 6 ounce cans tomato paste, 1/4 cup vinegar, 2 tablespoons hickory liquid smoke, 3 tablespoons mesquite liquid smoke, 1/3 cup molasses, 1/4 cup honey, 1/4 cup sugar, 1/4 cup brown sugar, 1 teaspoon salt, and 1/2 teaspoon Tony Chachere’s creole seasoning into a medium-sized bowl. Stir all ingredients with a whisk until combined. Start off slow at first then as the mixture starts to come together, then you increase speed as you go.
Preheat fire to medium heat.
Step 2- Let a medium sized 4-quart pot get hot for 1 to 2 minutes. Add your barbecue sauce and give it a quick stir. Let the barbecue sauce get hot for 2 to 3 minutes. Once done turn your fire off and let the barbecue sauce cool completely. You can also make the barbecue sauce 1 to 2 days in advance.
Turkey wings
Step 3- Add the turkey wings into a large strainer and rinse the turkey wings off with cold water and place them into a large or medium sized bowl.
Marinating the turkey wings
Step 4- Add 1 teaspoon salt, 1/4 teaspoon black pepper, 2 teaspoons Tony Chachere’s creole seasoning, 2 teaspoon chef Paul’s poultry magic, 2 teaspoons granulated onion, 2 teaspoons granulated garlic, 1/2 teaspoon cayenne pepper, 1 tablespoon hickory liquid smoke, and 1 tablespoon mesquite liquid smoke. Rub the seasonings and the liquid smoke onto the turkey wings with your hands. Cover the bowl with a lid. Let the turkey wings marinate in the fridge for 4 to 6 hours or overnight.
Baking the turkey wings
Preheat oven to 325-degrees F.
Step 5- Add the turkey wings into a 10 by 13 inch deep dish glass pan. Add 1/2 cup water into the bowl that you had the turkey wings in, move the water around the bowl and carefully pour the water into the baking pan
.
Step 6- Add 4 tablespoons of salted butter cubed into the baking pan more closely toward the sides of the baking pan. Add one cube salted butter underneath right inbetween each turkey wing.
Step 7- Line aluminum foil along the top of the baking pan. Poke holes at the top of the aluminum foil using a large fork. This will allow some of the steam to escape during the baking process.
Important note- Baking times vary depending of the size of the turkey wings.
Step 8- Place into a preheated 325 degree oven on the middle rack. Bake for 2 hours. Always remember baking times vary depending on the size of the turkey wings.
Step 9- Remove the turkey wings from the oven. Remove the aluminum foil from the top of the baking pan. Let the turkey wings cool for 10 to 15 minutes.
Set your oven broiler to high. Let it get hot for 2 to 3 minutes.
Step 10- Line a 11 by 17-inch baking pan with aluminum foil. Add the turkey wings into the baking pan.
Step 11- Generously brush the barbecue sauce on all sides of each turkey wing. Place into your oven broiler for 4 minutes checking every minute to ensure nothing burns. Do not leave the turkey wings unattended.
Step 12- Remove the turkey wings from the oven broiler. Flip the turkey wings over using tongs. Brush some more barbecue sauce onto the turkey wings.
Step 13- Place into your oven broiler once again for 3 to 4 minutes checking every minute to ensure nothing burns. Do not leave your stove unattended.
Step14- Remove the turkey wings from your oven broiler. Let cool for 5 to 10 minutes and after that the turkey wings are ready to be served.
