Shrimp and hot sausage pizza

What you’ll need
Bread flour or all-purpose flour
Sugar
Instant yeast
Extra virgin olive oil
Salted butter
Tomato paste
1-pound small Louisiana shrimp (Peeled, cleaned and deveined)
Patton’s hot sausage or hot Italian sausage
Shredded Mozzarella cheese
Shredded Parmesan cheese
Shredded Romano cheese
Pepper jack cheese

Seasonings

Tools you’ll need
16-inch diameter pizza pan
Rolling pin
Cheese shredder
Pastry brush

Preparation of ingredients
Seasonings and cheeses

Step 1- Chop 1 yellow onion. Rinse off green bell pepper and chop that into small chunks. Shred 4 or 8 ounces of the pepper jack cheese. Place all ingredients into fridge.


Spicy Marinara sauce
Preheat fire to medium heat.

Step 2- Add 6 ounces of Tomato paste and 3/4 cup water into a medium-sized pot and stir with a whisk until combined. Next add 1/4 teaspoon salt, 1/4 teaspoon onion powder, 1/4 teaspoon garlic powder, 1/4 or 1/2 teaspoon of Cayenne pepper, 1/4 teaspoon dried oregano, 1/4 teaspoon dried basil, 1/8 teaspoon dried thyme and 1 teaspoon sugar. Stir all ingredients together and let simmer for 3 or 4 minutes stirring occasionally. Turn fire off and add 2 teaspoons salted butter and stir. Let cool completely. You can also make this a day in advance.


Shrimp
Preheat fire to medium heat.

Step 3- Spread salted butter (about 2 tablespoons) around the bottom of a large saucepan. Add shrimp and 1/4 or 1/2 teaspoon Tony Chachere’s creole seasoning and stir. Let sauté for 1 or 2 minutes. Turn fire off and Transfer into a small bowl and let cool.


Hot sausage
Preheat fire to medium heat.

Step 4- Add 1-pound of Patton’s hot sausage into a large saucepan. Let sauté for 4 minutes stirring occasionally. Make sure you take the edge of your wooden spoon or spatula and break down some of the larger pieces of the sausage during the cooking process. Once done turn fire off and add hot sausage into a small mesh strainer with a pan underneath it to catch the drippings. Leave about 1 or 2 tablespoons in the large saucepan as we’re going to use that to sauté the seasonings next in step 5.


Seasonings
Preheat fire to medium heat.

Step 5- Add chopped yellow onion (1 cup or 1 1/3 cups) and chopped bell pepper (1 cup or 1 1/3 cups) into large saucepan with 1 or 2 tablespoons of the pan juices left over by the hot sausage from step 4. Let sauté for 6 minutes stirring occasionally. Turn fire off and add mixture into a small serving bowl to cool.


Pizza crust
Step 6- Add 3 1/4 cups bread flour or all-purpose flour, 1 tablespoon sugar, 2 teaspoons instant yeast, and 2 teaspoons salt into stand mixer bowl. Stir all ingredients together and place mixing bowl onto stand mixer fitted with dough hook attachment.


Step 7- Add 1 1/3 cups warm water (Temp: 115 to 120 degrees F.), 2 tablespoons melted salted butter, and 2 tablespoons extra virgin olive oil. Mix on a medium-low speed for 3 to 4 minutes or according to your mixer’s instructions for mixing doughs. Dough should not stick to your hands once the mixing process is complete.


Step 8- Lightly flour surface of table and add dough on top of table. Knead for 1 or 2 minutes. From there let the dough rest for 15 minutes.


Step 9- While the dough is resting, add 2 teaspoons extra virgin olive oil into pizza pan and spread it around the pan. Lightly sprinkle cornmeal around the pizza pan this is optional. Once done set pizza pan aside.


Step 10- Press dough down with your hands and form it into a flat circle. From there roll the dough into a 21-inch in diameter circle. Carefully place pizza dough onto pizza pan. Trim off any excessive dough from the outer edge of the pizza pan with kitchen scissors.


Step 11- To form the pizza crust, make an indentation with your fingers about 1-inch from the edge of the pizza pan. Poke holes into the pizza crust with a fork. This will prevent the pizza crust from bubbling during the baking process. Avoid poking holes into the crust portion of the pizza. Picture demonstration below.

Adding the toppings
Preheat oven to 450-degrees.

Step 12- Spread spicy marinara sauce onto the pizza crust. Avoid adding the sauce onto the outer most portion of the crust. Lightly sprinkle shredded Parmesan cheese onto the marinara sauce. Add sauteed onions and green bell peppers, and sprinkle 1st half of the of the shredded Mozzarella and pepper jack cheese.


Step 13- Sprinkle hot sausage and shrimp, 2nd half of the Mozzarella and pepper jack cheese. Lastly sprinkle a small amount about 1/2 cup of the shredded Romano cheese on top.


Baking the pizza
Step 14- Place into a preheated 450-degree oven for 15 to 20 minutes. Once the baking time is done (about 15 minutes), remove pizza from oven and set aside.


Garlic butter mixture
Step 15- Add 2 tablespoons melted salted butter and 1/2 or 1 teaspoon garlic powder into a small bowl and stir until combined. Brush garlic butter mixture onto the outer edge of the pizza crust and wait 5 to 10 minutes before serving.
