Southern Cast Iron Skillet Cornbread

What you’ll need
Yellow cornmeal
All-Purpose flour
Sugar
Salt
Baking powder
Baking soda
Salted butter
Buttermilk (Room temp)
2 large eggs (Room temp)

Tools you’ll need
10 inch round cast iron skillet
Wire whisk
Sturdy spoon

Preparation of cornbread and Cast iron skillet for baking.
Preheat oven to 400 degrees.

Step 1- Add cast iron skillet into a preheated 400-degree oven. Let it sit in the oven until the batter is ready to be poured into the skillet.

Dry ingredients

Step 2- Add 2 cups yellow cornmeal, 1/2 cup all-purpose flour, 1 teaspoon baking powder, 1 teaspoon baking soda, 2 tablespoons sugar, and 1 1/2 teaspoons salt into a medium sized bowl. Stir all ingredients together. Set aside.

Wet ingredients

Step 3- In a separate medium sized bowl, add 1 1/4 cups buttermilk (Room temp), 12 tablespoons (1 1/2 Sticks) Salted butter melted and 2 large eggs (Room temp), and stir all ingredients together with a wire whisk until combined.

Step 4- Add wet ingredients into dry ingredients. Stir with sturdy spoon until combined.

Baking your cornbread
Step 5- Remove cast iron skillet from oven. Spread salted butter around bottom and sides of skillet. Add cornbread batter into skillet. Shake skillet slightly to make batter even.

Step 6- Place into a preheated 400-degree oven for 15 to 20 minutes.

Step 7- Remove cornbread from oven. Toothpick test inserted should come out clean. Spread salted butter around the top of the cornbread. Let sit for 5 to 10 minutes before serving.
