What you’ll need
All-purpose flour or cake flour
Sugar
Salt
Baking powder
Unsalted butter (Room temp)
Large eggs (Room temp)
Whole milk (Room temp)
Sour cream (Room temp)
6 ounces fresh strawberries
1 large banana (5 ounces)
Vanilla extract
Butter extract
Strawberry extract
Banana extract
Red gel paste or liquid food coloring
Confectioners’ sugar

Baker’s joy non-stick baking spray
Preparation of ingredients
Dry ingredients (All-purpose flour or cake flour mixture)
Step 1- Sift 3 cups all-purpose flour or cake flour, 1 teaspoon baking powder, and 1/4 teaspoon salt into a medium-sized bowl. Stir all ingredients together.
Strawberries and bananas
Step 2- Rinse strawberries off with cold water. Trim off stem off of the strawberries. Cut each strawberry into quarter pieces.
Step 3- Add chopped strawberries and bananas into a small food processor. Blend for 1 minute.
Wet ingredients (Strawberry banana mixture)
Step 4- Add 1 cup pureed strawberry banana mixture, 1 tablespoon whole milk (Room temp), 2 tablespoons sour cream (Room temp), 1 teaspoon vanilla extract, 1 teaspoon strawberry extract, 1 teaspoon banana extract, and toothpick dipped in the red gel paste food coloring and swirled into the ingredients. If you are using liquid food coloring, add 1/4 teaspoon of red liquid food coloring. Stir all ingredients together with a whisk until combined.
Cake batter
Step 5- Add 3 sticks unsalted butter (Softened and at room temp), and 3 cups confectioners’ sugar into a stand mixer bowl. Mix on high speed for 6 minutes. Scrape down sides of bowl.
Step 6- Add 5 large eggs (Room temp) one at a time while mixing on a medium speed until incorporated. Scrape down sides of bowl.
Step 7-Alternate the all-purpose flour mixture and the strawberry banana mixture into the batter 3 separate times. Mix on a medium low speed each time for 15 to 20 seconds or until combined. Scrape down sides of bowl.
Baking the cake
Spray your bundt pan with the Baker’s joy non-stick baking spray.
Preheat oven to 325-degrees F.
Step 8- Pour prepared cake batter into your Bundt pan. Spread the cake batter around your Bundt pan as evenly as possible. To make the batter more even, shake Bundt pan and tap the bottom of the Bundt pan with your hands.
Step 9- Place into a preheated 325-degree F. oven for 1 hour and 10 minutes.
Step 10- Remove the cake from the oven. Toothpick inserted into the cake should come out clean. Let the cake cool for 2 to 3 hours before removing from the Bundt pan.
Step 11- After the cake cools, flip the cake onto a cooling rack.
Strawberry Banana icing
Step 12 Add 1 and 1/4 cups confectioners’ sugar, 3 tablespoons warm whole milk, 3 tablespoons melted unsalted butter, 1 teaspoon finely chopped strawberry, 1/2 teaspoon vanilla extract, 1/4 teaspoon butter extract, 1/4 teaspoon banana extract, 1/4 teaspoon strawberry extract, and a toothpick dipped into the red gel paste food coloring swirled into the icing. If you are adding liquid food coloring add 2 to 3 drops in there. Stir all ingredients with a whisk until creamy and smooth with no visible lumps.
Decorating the cake
Step 13- Add the cooling rack with the cake on top of it onto an 11 by 17-inch baking pan. Pour the icing on top of the cake.
Step 14- Once you pour the icing on the cake, take 2 spatulas and place them underneath the cake. Carefully lift the cake up and place it onto a cake serving pad or dish. Let the icing set for 15 to 20 minutes and after that the cake is ready to be served.
