Sweet Potato Pie (2019 recipe)

What you’ll need

3 large, sweet potatoes
2 Large eggs (Room temp)
12 ounces Evaporated milk (Room temp)
Sugar
All Purpose flour
Unsalted butter
Vanilla Extract
Cinnamon
Nutmeg
All Spice

Tool’s You’ll need
9 inch round deep-dish pie pan fitted with a frozen pie shell.
Hand mixer (To remove sweet potato strings.)

Par-boiling the Sweet Potatoes.
Preheat fire to medium high heat.
Step 1- Add 3 Quarts water into a large pot. Let come to a simmer. Add 3 Sweet potatoes. Let simmer for 1 hour and 20 minutes.

Step 2- Add Sweet Potatoes into a Large bowl filled 1 quart water and 3 cups ice. Let sit for 10 minutes. After 10 minutes remove sweet potatoes and set them aside.

Step 3- Peel outer skin of sweet potatoes using a butter knife.

Removing the Sweet Potato strings.
Step 4- Mix sweet potatoes on a medium high speed for 40 seconds. Scrape down sides of bowl. Rinse off mixer blades in your sink. Make sure you have a mesh drainer in place in your drain to catch the sweet potato strings. Repeat this step 6 times or until no sweet potato strings are visible on the beater blades of your hand mixer. Once done you should have about 3 1/2 cups (1-pound 14 ounces in weight) of mashed sweet potatoes

Making the Sweet Potato Pie filling
Step 5- Add 2 Large eggs (Room temp) Mix on medium high speed until combined. Scrape down sides of bowl.

Step 6-Add 4 tablespoons unsalted butter melted. Mix on medium high speed until combined. Scrape down sides of bowl.

Step 7-Add 3/4 cup evaporated milk (Room temp). Mix on medium high speed until combined. Scrape down sides of bowl.

Step 8- Add 1 1/2 cups sugar. Mix on medium high speed until combined. Scrape down sides of bowl.

Note- Be careful not to add too much of the spices into your pie. If you add too much of the spices it will overpower all of the ingredients in your pie.

Step 9-Add 1 tablespoon Vanilla extract, 1 teaspoon cinnamon, 1/8 teaspoon nutmeg and 1/8 teaspoon all spice. Mix on medium high speed until combined. Scrape down sides of bowl.

Step 10- (Optional) Add 1/4 cup all-purpose flour. This acts as a thickening and binding agent for your pie filling. It will improve the texture and stability of your pie.

Baking your Sweet Potato Pie.
Preheat oven to 350 degrees.
Step 11- Add Sweet potato pie filling into a frozen pie shell. Spread pie filling around pie shell as even as possible. To make the filling more even, shake your pie pan slightly.

Step 12- Place into a preheated 350-degree oven for 1 hour and 10 minutes.

Step 13- Remove pie from oven. Tap sides of pie pan. If the center of the pie jiggles or if the pie filling doesn’t jiggle at all it is done. Let pie cool completely before serving.

For best results.
Serve your pie the next day after you bake it so that way the flavors of the pie can settle and increase overnight.
