Vegetable Pizza

What you’ll need
1 bunch Kale
Baby Bella Mushrooms
2 Roma Tomatoes
Black olives
1 Red Bell Pepper
1 Green Bell Pepper
1 small Red Onion
1 pod Garlic
Bread flour or all purpose flour
Sugar
Instant yeast
Extra virgin Olive oil
Salted or unsalted butter
6 ounces Tomato paste (No salt added)
Note- Cheeses listed below are interchangeable meaning you can use all of the full fat cheese or the fat free cheese.
8 ounces shredded Mozzarella Cheese
7 ounces shredded Mozzarella Cheese (Fat Free)
Grated Parmesan Cheese

Tony Chachere’s creole seasoning
Chef Paul’s Vegetable magic
Onion powder
Garlic powder
Dried Oregano
Dried Basil
Dried Thyme

Tools you’ll need
16-inch diameter pizza pan
Rolling pin
Food processor
Pastry brush
Whisk

Cleaning and preparation of vegetables
Step 1-Rinse Kale, Roma Tomatoes, Red and Green Bell peppers, and mushrooms off with cold water. Pat dry mushrooms with napkins. If you don’t want to rinse the mushrooms off with water you can take a pastry brush and brush the dirt off of the mushrooms.


Note- All of the vegetable amounts listed in the recipe video are the amounts they sell in the grocery stores, therefore you will have some vegetables left over after preparation is completed.


Step 2- Slice half of a Red onion into slices. Once done chop each slice in half and separate the pieces of onion into strips.


Step 3- Chop half of a Red and a Green bell pepper into strips


Step 4- Chop 2 Roma tomatoes. Remove the insides of both tomatoes and place juices, seeds parts into a small bowl. Chop tomatoes outer skin into strips. Also take the inside parts of the tomato and chop that into small pieces. Add tomato juices and seeds into a mesh strainer with a bowl underneath it. Once done discard the tomato seeds. Reserve the tomato juice left in the bowl.


Step 5- Chop 5 ounces baby bella mushrooms into thin slices.


Note- You will only need 2 to 3 whole leaves of Kale.
Step 6- Remove leaves off of stems of Kale. Bunch all leaves together and chop.

Making the marinara sauce
Step 7- In a small bowl add 6 ounces Tomato paste (No salt added), 2 to 3 tablespoons Tomato juice, and 1/2 cup water. Stir with whisk until combined. Add 1/2 teaspoon salt, 1/4 teaspoon Tony Chachere’s creole seasoning, 1/2 teaspoon Chef Paul’s Vegetable magic, 1/2 teaspoon Onion powder, 1/2 teaspoon Garlic powder, 1/2 teaspoon dried oregano, 1/2 teaspoon dried Basil and 1/2 teaspoon dried thyme and 1 tablespoon sugar. Stir with whisk until combined and set aside.

Making the pizza crust
Step 8- In a stand mixer bowl, add 3 1/4 cups Bread flour or all purpose flour, 2 teaspoons instant yeast, 1 tablespoon sugar, and 2 teaspoons salt. Stir until combined.


Step 9- Place bowl onto stand mixer fitted with dough hook attachment. Add 1 1/3 cups water (Temp 100 to 110 degrees F), and 1/4 cup olive oil. Mix on low speed or according to your stand mixers instructions on mixing dough for 2 minutes or until dough doesn’t stick to your hand. If the dough still sticks add an additional 2 tablespoons bread flour or All purpose flour and mix on a low speed for 1 minute or until dough no longer sticks to your hands.


Step 10- Lightly flour surface of table and add dough on top of table. Knead dough 10 to 15 times and form dough into a ball. Let dough rest for 10 to 15 minutes.


Step 11- Add 2 teaspoons olive oil into pizza pan. Spread oil around pan. Set aside.


Step 12- Press dough down with your hands forming a flat circle. Lightly sprinkle flour on to dough. Roll dough into a 14 inch diameter circle using a rolling pin. Dough thickness should be the same all around.


Step 13- Transfer dough on to pizza pan. Lightly press and stretch dough towards the edge of the pizza pan. Again dough thickness should be the same all around.


Step 14- Take fingers and carefully make indentations on to the dough 1 inch (inward) from the edge of the pizza dough. This will form the crust. (Demonstration below)

Adding the Toppings
Note- Add as much of toppings as you like on top of the pizza. Careful not to add too much. Once done you will have some toppings left over which is normal. You can also make an additional pizza if you like.


Step 15- Add Marinara sauce on to pizza dough. Spread around as even as possible with passing the indentation marks on the pizza dough. Sprinkle 1/3 cup grated Parmesan cheese on top.


Step 16- Add Red Onion strips, Green bell pepper strips, Red bell pepper strips on to pizza. Once done add The full fat and the fat free Mozzarella Cheeses into a medium sized bowl. Mix together with your hands and sprinkle a half a cup on top of pizza.


Preheat oven to 450-degrees
Step 17- Add tomato strips, Mushroom slices and chopped kale on top of pizza. Once done sprinkle Mozzarella cheeses on top. Use all of the shredded cheese.


Step 18- Place into a preheated 450-degree oven on the middle rack for 15 to 20 minutes. Remove pizza from oven and set aside.


Making the Garlic butter
Step 19- In a food processor, add 3 tablespoons melted salted butter or Olive oil and 2 cloves garlic. Blend for 1 minute. Brush garlic butter mixture on to pizza crust. Let pizza cool for 5 minutes before serving.
