Watermelon Lemonade

Makes 1 gallon lemonade

What you’ll need
3-pounds watermelon (with seeds or seedless)
1 pound and 11 ounces lemons
Sugar

Large sturdy spoon
Citrus juicer
Mesh strainer
Food processor
1-gallon plastic pitcher (With lid)

Preparation of ingredients
Watermelon

Step 1- Trim off the thick outer layer of skin of the watermelon and discard. Cut the red portion of the watermelon into medium-sized cubes. If the watermelon contains seeds, do not remove the seeds as we will strain the seeds out in a later step.


Step 2- Add half of the chopped watermelon pieces into a large food processor. Blend for 15 seconds. Add the second half of the watermelon pieces into a large food processor. Blend for 15 seconds. Add the pureed watermelon into a medium-sized bowl.


Lemons
Step 3- Cut all lemons in half with a knife and place them into a medium-sized bowl. Juice all of the lemon halves using the citrus juicer. Add the squeezed lemon juice into a small measuring cup. Once done you should have 1 and 1/4 or 1 or 1/2 cups lemon juice.


Pasteurizing and assembling the lemonade
Preheat fire to medium heat.
Step 4- Add 2- and 1/2-quarts water, Pureed watermelon, squeezed lemon juice and 1 and 1/2 cups sugar into a large pot. Stir all ingredients together. Let the lemonade get hot for 10 to 12 minutes. Once the heating time as ended turn your fire off. Let the lemonade cool until it’s warm or let it cool completely.


Straining your lemonade
Step 5- Pour half of the lemonade into a mesh strainer with a medium-sized bowl underneath it. Remove the mesh strainer from the bowl. Stir the pulp leftover in the mesh strainer with a spatula. Press the pulp down into the mesh strainer to allow the liquid to drain into the bowl. From there discard the leftover pulp. Repeat this step with the second half of the lemonade leftover in the pot.


Step 6- Pour prepared lemonade into a 1-gallon plastic pitcher. Cover the pitcher with a lid. Place into the fridge for 4 to 6 hours. For best results let the lemonade chill in the fridge overnight.

Serve cold and enjoy!
